A lemon should not have one job.

We’re landing in Kangaroo Valley on Saturday 1 August for Citrus After Dark.

We’ll make a citrus syrup from fresh local fruit, look at what the peel, zest and juice are actually good for, then put the method to work in two cocktails made with Old Salt Distillery spirits.

You’ll also have light snacks and leave with the syrup you made and the recipes to use it again at home.

No cocktail experience is required. We’ll show you the method.

A compact corporate event does not need to feel small.

For The Wisdom Vault at Suite 36, Jones Bay Wharf, Trolley’d delivered a Compact Return Flight with glassware for approximately 35 guests.

The service window was short, from 5:30pm to 7:00pm, so the details mattered: early setup, polished crew, proper glassware, drinks that could move quickly, and service timing that worked around speeches rather than interrupting them.

The beverage program included cocktails, mocktails, beer, wine and non-alcoholic drinks, with the Illawarra Plum, Riberry and Finger Lime Spritz as the hero serve.

It was bright, botanical, visually strong and efficient to serve. The kind of drink that gives a room a story without slowing the night down.

Sustainability is not a garnish.

It is the trolley we brought back into service. The aircraft parts given another chapter. The native botanicals in the glass. The foraged fruit that might otherwise fall and rot. The reusable kit packed tight, rolled in cleanly, and rolled out without leaving a mess behind.

Trolley’d started with ex-airline trolleys built to serve at altitude.

Now they serve something grounded: seasonal drinks, Australian ingredients, low-waste prep, and hospitality with a story worth telling.

Not a lecture. Not a green sticker on the menu. Just better design, better drinks, and a lighter footprint.

Arrival lounge open.

Walking the Kangaroo Valley property, we found nine wild plants already growing there.

Not planted for effect. Not styled for a shoot. Just there, in the ground, doing what wild systems do.

Some edible. Some invasive. Some native. Some useful because they ask better questions than they answer.

That has become the starting point for the Wild Systems Immersion: a curated botanical walk through place, ecology, flavour, and regenerative hospitality.

The Wild Systems Immersion page is now live, along with a destination blog on the Kangaroo Valley property and a new set of plant entries in our foraging library.

This is the quieter side of Trolley’d. Still hospitality. Still theatre. Just closer to the soil.

Read the destination blog, explore the Wild Systems walk, and have a look through the nine plants now added to the foraging page.

Nine years at Pitch Music & Arts, and we are still finding new ways to make the artist bar feel like its own little departure lounge.

This year we served the Pitch Spritz: Illawarra plum, riberry and lemon myrtle, poured by our First Class crew and carried through the festival with the Trolley’d cocktail backpack.

There were plenty of good moments, but the closing set with Job Jobse was hard to beat.

Pitch has always been special for us. It is where the weird ideas get tested, the crew earns their wings, and the bar becomes more than a bar.

It becomes part of the story.

Thanks to the Pitch team for having us back again, and to Duncographic for the brilliant photos.

Nine down.

The tenth is going to need a bigger flight plan.

Aviation hospitality belongs on the runway.

At Wings Over Illawarra, Trolley’d brought the aircraft, Skyline Bar, airline trolley service and native botanical cocktails to Shellharbour Airport.

Public bar.
Gold Pass.
VIP hospitality.
Private aviation industry function.

Four service environments. One aircraft-led hospitality footprint.

This was not a bar beside an airshow.

It was aviation hospitality built into the event.
