It's a pressure job. Everyone's hungry, everyone's watching, and everyone's got an opinion. Make it easy on yourself: thick-cut chops and proper snags are far more forgiving than thin supermarket stuff when you look away for a big moment in the game.

A grass-fed tomahawk, seared hard and fast, then rested before the game. Slice it thick, pass the board round and watch the room go quiet for the right reasons.

Not every dad wants a steak. Some of them want the whole table.

A rolled shoulder of lamb that has been in since ten and comes out at two. A rib roast with the bones left in. Something that fills the house up and takes no attention for four hours, so he can sit down for once.

If that is your Sunday, ask us on the day and we will tie it, score it and tell you exactly how long to give it. Bring the number of people and we will work backwards from there.

A quiet word about this upcoming weekend.

The Saturday before Father's Day is the busiest morning we have all year. Every year, somebody comes in at half past eleven wanting six tomahawks and we have to tell them the last four went at nine.

So if you know what you want, tell us now. Call in, or come past and we will write it in the book. We will cut it fresh on the Saturday and have it ready with your name on it.

Which steak for which dad. A short guide from behind the counter.

Talks about marbling: scotch fillet. He wants the fat running through it, and he will tell you why while it rests.

Likes it lean, no fuss: eye fillet. Tender, quick, hard to get wrong.

Thinks he is a chef: tomahawk. It is theatre, and he will put it on his phone before he eats it.
Just wants a proper feed: rump cap. Underrated, big flavour, best value on the board.

Cooks for everyone else: a rolled and tied roast. Feeds the table, and he gets to carve it.
