Authentic Prawn Biryani, made with our Indian Grown Basmati 🍤
This recipe comes from Mohammed Sali, owner and chef of Malabar Indian Restaurant - exactly the dish our Basmati was made for. Grown in the foothills of the Himalayas, where climate and soil produce some of the finest grains around, it's long, aromatic, and stays separate once cooked - everything a great biryani needs.
INGREDIENTS
For the fried onions, cashews & raisins:
● Onion – 400g
● Oil, for frying
● Cashew nuts – 2 tbsp
● Raisins – 2 tbsp
For the prawn masala:
● Cooking oil – 2 tbsp
● Ghee – 2 tbsp
● Cardamom – 2
● Cloves – 4
● Cinnamon stick – 1½ inch piece
● Star anise – 1
● Mace – a little
● Ginger – 1 inch piece
● Garlic – 6 cloves
● Green chilli – 3
● Tomato – 3
● Salt – 2 tsp
● Turmeric powder – ¼ tsp
● Kashmiri chilli powder – 1 tbsp
● Garam masala – 1 tsp
● Crushed black pepper – 1 tsp
● Hot water – ½ cup
● Saffron threads – 2g
● Cleaned prawns – 500g
For the rice:
● SunRice Indian Grown Basmati – 3 cups (600g)
● Cooking oil – 2 tbsp
● Ghee – 2 tbsp
● Cardamom – 4
● Cloves – 6
● Cinnamon stick – 3 inch piece
● Bay leaf – 1
● Mace – a little
● Water – 4½ cups
● Salt – 1¾ tsp
● Lime juice – 1 tsp
For garnishing:
● Mint leaves – ¾ cup
● Ghee – 2 tbsp
METHOD
Masala:
Fry sliced onions until golden, then remove. Fry cashews, then raisins, and set aside. In the same pot, add ghee and whole spices - cardamom, cloves, cinnamon, star anise, mace - with crushed ginger, garlic and green chilli. Add sliced tomato, then the powdered spices. Stir in the fried onions, then add the prawns and cook through. Finish with coriander and mint.
Rice:
In a separate pot, add ghee and whole spices to water and bring to a boil. Add the SunRice Indian Grown Basmati and let it simmer. Cover and cook for 12 minutes, then fluff with a fork.
Assemble:
Layer the prawn masala, then rice, then masala again, then rice. Finish with a spoon of ghee, saffron milk, and the rest of the fried onions. Cover and let it sit on low heat to bring everything together. Weeknight dinner or festive spread, this is the rice we trust - just ask Mohammed.
