Moved the chicks into a bigger home today.

Thought id give the tend a try after seeing a few videos of people doing it.

It just fit in the spare room.

Strawberry scrap syrup

Throughout the year I collected any Strawberry tops, not so perfect berries and any berries that dont get eaten fast enough. I keep them in the freezer until I have a bunch saved to make syrup.

To make the syrup I put the berries into a pot and add water just till covered. I then bring that to a simmer covered for 15 to 30 min.
The berries are then strained out and the amount of liquid is measured. I then add equal parts of sugar to the liquid. 6 cups liquid would be 6 cups sugar

That is gently simmered uncovered for about an hour.

I then transfer to jars and water bath can for 10min.

Made Elk and Broccoli for dinner last night. It was so good even The Little asked if we can have it again.

I used Elk instead of beef and the broccoli I picked up at a local market.

I love when I can make a meal with primarily local items.
