Hello Coasters!

This week we have a special dish on the menu. Cochinita Pibil Tacos, a slow-roasted pork dish from the Yucatán Peninsula.

Cochinita is marinated in bitter orange juice and annatto seeds, and served in yellow corn tortillas with pickled red onion, refried black beans, and habanero chiles.

Seasoned Cauliflower, corn or flour tortilla. Covered in a fresh green tomatillo and cilantro salsa. Baked to perfection with a mixed cheese (or not) and topped with sour cream and pickled serrano, served with veggie Frijoles y Arroz.

Slow-cooked pork marinated in acidic juice and annatto seeds (not spicy), served with corn tortillas, refried black beans, pickled red onions and habanero chiles.
