Meet Darkside of the Moo from Gunn’s Hill Artisan Cheeses in Ontario.

This cheese is soaked in Darkside Chocolate Stout for four days and then aged for 3-4 months on cedar planks. It’s designed after a Swiss cheese called Mutchli.

You’ll be amazed by this mild and creamy cheese that boasts buttery notes and umami goodness.

Meet Mont St Benoit and Frère Jacques. Brothers, if you will, made in the Eastern Townships of Quebec nearby Magog. The monks at St Benoit Abby loving create cheese and apple c***r.

Both these tommes are a bit elastic and chewy. You may taste hazelnuts, almonds or buttered toast.

Pair with ham for a classic sandwich. Or, zip things up with pickled fruits and espresso.

Calling all goat cheese lovers!

In the case:
Crottin a ma maniere which is delightfully aged, tangy, wrinkly thing. Chalky and lactic. Spread on a baguette or crumble into green salad.

Le Chevronne boasts a thin, bloomy rind and grassy notes. Gentle melt this little wheel to heighten both the taste and the velvety texture.

A local cheese lover sent me these pictures along with the following words:

The Hines Creek Museum has items from Mrs Morgan's store. She (& the other groc stores in the 50's) sold wedges of cheese cut from a really large wheel of cheddar.
She would ask my mom. "About this much, Mrs. Wollsey?"
And mom would indicate just a little more, or a little less; Mrs. Morgan would adjust the size by turning the wheel, & wack a wedge off with the cleaver.
