These healthy apple and oatmeal cups are a lighter take on classic apple pie. Made with wholesome oats, fresh apples, and naturally sweetened with maple syrup, they’re crispy on the outside, soft and fruity on the inside, and perfect for a healthy snack or dessert. Easy to make and full of comforting fall flavors, they're a delicious treat you'll want to enjoy year-round.
Ingredients (Makes 9 cups):
For the Apple Filling:
3 large Gala apples (about 400 g), peeled and chopped
2 cinnamon sticks
2–3 tbsp. water
2 tbsp. maple syrup
½ cup (120 g) applesauce
⅛ tsp. cinnamon powder
⅛ tsp. ginger powder
For the Oat Crust:
½ cup (100 g) cottage cheese
3 tbsp. maple syrup
1½ cups (135 g) oat flour
½ tsp. baking powder
Instructions:
-Cook the chopped apples with the cinnamon sticks, water, and maple syrup until slightly tender. Stir in the applesauce, cinnamon, and ginger, cook for a few more minutes, then let the filling cool.
-Blend the cottage cheese with the maple syrup. Mix in the oat flour and baking powder to form a dough, then let it rest for 15 minutes.
-Roll the dough to about ⅛ inch (3 mm) thick and cut out circles. Press each into a muffin tin to form small cups.
-Fill each cup with the cooled apple mixture.
-Bake at 350°F (175°C) for 30 minutes, until lightly golden.
-Cool on a wire rack before serving.
