🦬💙🧀Two Italian Cheese ** Blu Di Buffalo and Vento D'Estate are Back for the Holidays!** 🇮🇹

**Back by popular demand!** After making an appearance during last year’s holiday season, our **Ble Di Buffalo** and **Vento D'Estate** are back just in time for Thanksgiving! 🍂🦃

1. Blu Di Buffalo Made from rich, high-fat **water buffalo milk**, this luxurious blue cheese has an exceptionally creamy texture and a beautifully balanced flavour that sets it apart from traditional cow’s milk blues.

✨ **Flavour:** The natural sweetness and richness of buffalo milk gently balance the **savoury, spicy character of blue mould**, creating a blue cheese that is bold yet surprisingly smooth and approachable.

🍷 **W**e Pairings:** Try it with a **sweet Passito, Port, Sauternes, or Moscato**. The touch of sweetness beautifully balances the salty, savoury blue notes.

2. 🌾🧀 **Veneto D’Estate — A Taste of the Italian Countryside** 🇮🇹

From the **Veneto region of northern Italy**, aged for a minimum of **5 months in oak barrels (barriques)**

✨ **Flavour:** Complex and wonderfully rustic, with pronounced notes of **freshly mown hay, woodland, and herbs**, balanced by a gentle milky tang and a subtle sweet finish.

✨ **Texture:** Dense and firmly compact, yet delicately crumbly — perfect for breaking into rustic pieces and enjoying on a cheese board.

🌿 **Rind:** Its rustic waxed rind is **not edible** and is embedded with visible strands of organic hay, reflecting the unique aging process.

🍷 **Perfect Pairing:** Try it with a **fruit-forward or medium-bodied red w**e**, especially a classic **Valpolicella Classico**.

🥖 **Serving Idea:** Wonderful with rustic bread, seasonal fruit, honey, or alongside cured meats for a truly Italian-inspired cheese board.

Come get yours before the holiday table is set! 🧀✨

🧀🇨🇭 **Saturday Cheese Tasting Oct. 03— Appenzeller Classic vs. Extra Old!**

Join us **this Saturday at Alex Farm** and discover how aging transforms one of Switzerland’s most distinctive cheeses! We’ll be tasting **Appenzeller Classic** alongside the bolder, longer-aged **Appenzeller Extra**.

Both are traditional Swiss cow’s milk cheeses from the Appenzell region, famous for being washed with a **closely guarded secret herbal brine** — a tradition that gives Appenzeller its unmistakable spicy, aromatic character.

🥈 **Appenzeller Classic — Silver Label**
Aged for **3–4 months**, Classic is the younger and gentler of the two.

✨ **Flavour:** Creamy, nutty, and fruity with a mild but distinctive herbal spiciness.
✨ **Texture:** Smooth and supple with a straw-coloured paste and tiny irregular holes.
🍷 **Pairing:** Try it with a crisp white w**e such as **Chasselas or Riesling**, a light Pinot Noir, or apple c***r.

⬛ **Appenzeller Extra — Black Label**
Aged for **at least 6 months**, Extra develops a deeper, more powerful personality.

✨ **Flavour:** Bold, tangy, and extra spicy, with complex notes of **toasted nuts, herbs, clover, and dark fruit**.
✨ **Texture:** Firm and smooth, becoming richer and more concentrated with age.
🍷 **Pairing:** Beautiful with **Riesling, Pinot Noir, or a dry to off-dry apple c***r**.

🧀 **Taste Them Side by Side:**
Which Appenzeller will be your favourite — the **creamy, approachable Classic** or the **bold and intensely flavoured Extra**?

🧀 **L’Etivaz AOP — A Taste of the Swiss Alps** 🇨🇭

Rare, traditional, and made entirely by hand, **L’Etivaz AOP** is a hard Swiss alpine cheese produced exclusively from **raw cow’s milk** collected from cows grazing on wildflower-rich mountain pastures in the Vaud Alps from May to October.

The milk is heated in large copper cauldrons over open wood fires right in the alpine chalets, giving the cheese a delicate smoky character.

🌿 **Flavor & Texture**
Rich, fruity, and slightly nutty, with a savory umami depth and a beautifully complex aroma.

⏳ **Aged to Perfection**
L’Etivaz is aged for at least 5 months, with many wheels aged **14 to 24 months or longer**, developing deeper and more complex flavors over time.

🏔️ **A Protected Swiss Tradition**
L’Etivaz was the **first Swiss cheese to receive AOP (Appellation d’Origine Protégée) status in 2000**, recognizing its unique connection to its traditional alpine production region.

✨ **How to Enjoy**
• Add it to a cheese board with fresh apples, grapes, or pears 🍎🍇
• Pair with cured meats and a light, fruity white w**e 🍷
