Mengding Huangya reminds us of the lingering warmth of late summer.

This delicate yellow tea from Mengding Mountain in Sichuan is made from the youngest, downy buds. What defines yellow tea is men huang, or “yellowing”, where the leaves are gently wrapped and kept warm and humid. This softens the grassy notes associated with green tea and brings out a mellow sweetness.

Light, soft and elegant, Mengding Huangya brings to mind warm late-summer afternoons and the last green days before the colours begin to change 🌞

As the seasons begin to shift, the colours around us change and the air feels a little different. This September, we invite you to explore tea from different perspectives.

We’ll move through Japanese and Chinese tea traditions, discover the depth of Pu Erh and the craft of Matcha, and look beyond the cup to explore tea through food. Along the way, we’ll pay attention to where tea comes from, how it is made, and how flavour, aroma and texture change with each infusion.

Whether you’re new to tea or looking to deepen your knowledge, there’s something to discover this September.

Sweet news in our teahouses.

We’re happy to introduce something new to our menu, Hojicha Sorbet🤎

Made with Hojicha powder from Koyamaen and coconut, our new sorbet is entirely vegan. Smooth and refreshing, with the warm, toasted notes of hojicha. Finished with sesame, adding a subtle toasted note.

We’ll be serving our Hojicha sorbet this Saturday, September 5th, at the annual Høstmarked on Værnedamsvej, come by for a first taste!

As always, Sing Tehus will be outside with a booth in front of the teahouse. We’ll be serving and selling a selection of teas, Matcha ice cream, and our new vegan Hojicha sorbet!

Have you tried cooking with Mugicha?

The warm, roasted character of Mugicha makes it a beautiful ingredient to bring into the kitchen.

Try adding the barley to rice as it cooks for a subtle toasted depth. Here, we have topped it with salmon and kombu, but you can add whatever toppings you prefer. Mugicha can also be used as part of a dashi for noodles, adding a roasted character to the broth.

Tea can be an ingredient as much as a drink. We hope this inspires you to experiment with Mugicha in your own kitchen and find your own ways to use its distinctive roasted character.

Shu Pu Sherry and Vodka.

One of several delicate drinks and servings on the menu at Sing Listening Bar in our Østerbro teahouse. An earthy and elegant cocktail where the rich Shu Pu tea unfolds alongside sweet sherry and a subtle hint of fresh ginger. Topped with Hojicha powder.
