We’re delighted to be serving a selection of sake at Sing Listening Bar. Sake is one of Japan’s most unique traditions, crafted from few ingredients, yet capable of extraordinary depth and variation.

We’re very grateful to work with Manaka Sake, whose carefully curated selection reflects a passion for sake, with a focus on bottles that shine alongside food and are the kinds of sake they genuinely enjoy drinking themselves.

Our current menu includes two of their sakes

Daijiro Junmai Ginjo Usu-Nigori Namazake: a sake of beautiful balance. Elegant and refined, yet remarkably deep, expressive, and full of flavour, with layers of umami and a lively freshness.
Retsu Junmai: a refined and dry sake from Yamagata with remarkable depth, minerality, and a long, cooling finish.

For nearly 20 years, every May we have received Shincha tea from Hoshino Seichaen, a family-run tea producer in the small town of Yame in the mountainous southern part of Fukuoka Prefecture on the island of Kyushu. The company has been growing and producing tea here since 1947 and is known today for tea of the highest quality.

Almost all of the tea we at Sing Tehus receive from Hoshino Seicha is spring tea. Since shincha isn’t aged before it’s sold, tea drinkers have the opportunity to experience the truly fresh taste of green tea/sencha.

Behind every tea lies an extraordinary amount of dedication, care, and craftsmanship. We are truly grateful to be able to enjoy these remarkable teas this season together with all of you. Limited harvest, limited availability - discover them in our teahouses while the season lasts.

Visiting Baba Kojiro is always an amazing experience. Baba-san learned the craft of porcelain and ceramics from his parents and has now taken over the studio, which has a stunning view. He has developed a very personal expression in his work — a simplicity combined with tactility and beauty.
Black spots and unevenness in the color from glaze drips are intentionally left, giving each piece its own individual character.

Not only does Baba-san work tirelessly to produce tableware, he also goes into the mountains to collect kaolin, the raw material used for making porcelain. The kaolin must go through seven stages of preparation before it is ready to use.

Meeting people with this level of dedication is truly inspiring, and we are very grateful.

And don’t worry back home — we have placed an order for three types of teacups, plates, and incense holders.
This time we also got to meet the new family member, a rescue dog named Haru, which means Spring since he came with the Spring.

This year, we will be offering three unique shincha teas, all from Hoshino Seichaen.

SHINCHA LIMITED NO. 80: A blend of the cultivars Saemidori, Kirari 31, Tsuyuhikari, and Yabukita, offering deep green colour, layered umami, gentle sweetness, and floral notes with hints of peach, chestnut, and cherry blossom.

SHINCHA YAME NO. 100: A blend of the cultivars Saemidori and Tsuyuhikari, offering a bright green cup with elegant umami, soft sweetness, and refreshing floral notes of cherry blossom.

PREMIUM SHINCHA NO. 120: A single cultivar Shincha consisting of Saemidori, often used for high end shincha, sencha and gyokuro. Bright green in colour with an elegant fragrance, rich umami and less astringent.

Like many Japanese green teas, these teas are blends of different cultivars. It is a great art to blend them optimally to achieve a balanced expression of flavour, aroma, and texture.

Inspired by the Japanese “jazz kissa”, we will create a space where music and tea take center stage, Sing Listening Bar. Through carefully curated sound experiences, the atmosphere invites you to slow down and fully immerse yourself in sound, taste, and ambiance.

At the same time, we expand the experience with a curated selection of:
– delicate cocktails
– sake
– matcha beer
– small, refined servings

We hope you will join us tomorrow, Friday May 15 at Rosenvængets Allé 6 from 17-20, for the opening of Sing Listening Bar.

Music has always been an important part of Sing Tehus, but now music is taking on an even more prominent role in our teahouse on Rosenvængets Allé, for Sing Listening Bar. We have partnered with Treble Clef Audio, a Danish engineer named Ole Siig. Using advanced technology, he has developed speakers and a new way to experience music. Treble Clef Audio focuses on creating more than just speakers - they develop holistic experiences where sound, aesthetics, and quality go hand in hand.

The music will be theme-based and will change every two weeks, continuously introducing new soundscapes and atmospheres🎶
