-steel: 135cr3 & clean wrought iron san-mai
-distal taper: 5,9mm - 2,0mm - 0,95mm (20mm from the tip)
-handle: Hyperbola handle in vintage canvas micarta and burnt brass top-cap.
-weight: 281g

Cleaver:
-bl@de: 190mm x 72mm
-steel: 135cr3 & clean wrought iron san-mai
-distal taper: 5,6mm - 2,0mm - 1,2mm (spine at the tip)
-handle: Rokkaku Han Maru handle in bog oak and holm oak ferrule.
-weight: 243g

Big boy gyuto! A full 269mm x 69mm👀 of wrought iron & 135cr3 san-mai with a full black kurouchi and lots of geometry.
To balance all of that out. Is a ‘Hyperbola’ handle in vintage canvas micarta and burnt brass top-cap!
And the best part..

It’ll be available this Saturday (6th) along with the mid sized cleaver, on my website!
More details about the two bl@des and when they’ll be available soon.

Another finished bl@de ready for .austria 🔥

This gyuto is one of my recent favourites! But you’ll have to wait to get your hands on it, because it’s going with me to .austria in October!

The lower heel height (54mm) is something that I haven’t done in a long while on a gyuto and it’s something I’ll for sure have to do more of!
Also two very stunning pieces of mulga and masur birch for the handle!

Progression from forged to hardened.

1. The 4 bl@des as forged and touchmark stamped.

2. Annealed, normalised and then sandblasted.

3. Cold forged under the power hammer with the new dies. To smoothen the surface and refine the geometry.

4. Pre-heat treatment profile ground.

5. Tang step filed in, date and steel specifications stamped in the tang.

6. Clay applied for the heat treatment.

7. All 4 bl@des quenched, tempered and minor warps straightened.

8. The kurouchi is missing in a few spots, but it’s along the edge on all the bl@des so it won’t be a problem.

Onto grinding and polishing 👋
