Back at the winery with David and Jonas Tofterup, continuing the journey of our Winemaker Wines at Binivista. 🍇

Jonas, Denmark’s first Master of Wine, and David have become true friends of the house, and we are excited to keep building this story together.

After joining us during harvest and being deeply involved in the vinification process, they are now back at the estate to follow the evolution of their 7 barrels of Syrah.
More to come soon from Mallorca. 🍷

Så er vi endelig klar til at tappe vores nye vin. Udover at I kan glæde jer til vinene, så er der også en lille “overraskelse” på etiketten. I dag 265 Galatzo - vores Chardonnay/Giro Ros blend.

Every year, we celebrate something truly special at BiniVista 🌿✨ our Easter Party.

The opening vernissage of “Symbiosis” by PoppyKalas became much more than an exhibition — it was a moment where art, wine, and people came together in perfect harmony.

We unveiled the Artwork of the Year and introduced the Art Wine of the Year, sharing not just creations, but stories, passion, and vision.

Thanks to , and to all hard work with this 100% Viognier.

From the first welcome to the last song of the night, the space filled with community, connection, music, food, and an incredible atmosphere.

Vi inviterer dig til en helt særlig eftermiddag og aften på BiniVista – hvor vin, kunst, natur og fællesskab smelter sammen 🍷🎨

Fredag den 3. april 2026 åbner vi dørene til vores årlige påskeudstilling – i år med værker af den anerkendte danske kunstner PoppyKalas (Thilde Maria Haukohl Kristensen).

Inspireret af Mallorcas vilde natur, vinmarkernes rytme og det særlige middelhavslys, præsenterer hun udstillingen “Symbiose” – en sanselig hyldest til forbindelsen mellem menneske og natur. 🌊🌿

At this time of the year, we move slowly through the vineyard, giving attention to each vine. One of the key tasks is green pruning, removing double shoots that grow from the same point, as well as those that are not needed.

In doing so, we help the vine focus its energy. When several shoots grow in the same place, they compete for space, light, and nutrients. By selecting the strongest one, we encourage a more balanced and harmonious growth.

It’s a delicate process. Every vine is different, and there is no fixed rule. Some are more vigorous, others more restrained, and each decision is made by hand, one vine at a time.

These small actions, carried out early in the season, gradually shape the structure of the plant. In the end, they have a direct impact on both the quality and quantity of the grapes we will harvest later on.

For præcist 8 år siden plantede vi vores første vinstokke. Og i dag vi udvidet med yderligere ca 2 ha. Vi er blevet rigtig glade for kvaliteten af vores vine baseret på Sauvignon Blanc og Syrah, og har derfor besluttet at plante flere af disse 2 sorter.

Exactly 8 years ago we planted our first vines. And today we have expanded them by another 2 hectares. We have been really satisfied with the quality of our wines based on Sauvignon Blanc and Syrah and have therefore decided to plant more of the 2 varieties.

We’ve blended the native Giró Ros with Chardonnay to create something truly unique. And here’s a secret for the geeks: the mountain faces our winery at a perfect 265° angle. Coincidence? Or just the perfect alignment for a great wine? 📐✨

Vi har blandet den lokale Giró Ros med Chardonnay for at skabe noget helt unikt. Og her er en lille hemmelighed: bjerget kigger direkte mod vores vingård i en vinkel på præcis 265°. Tilfældighed? Eller bare den perfekte vinkel til en fantastisk vin? 📐✨
