Bit grey and gloomy in Suva so felt like something warming for lunch. I think this took me from 10min from stat to finish and because we currently have so much duruka and it’s in season, it’s been everything we eat for lunch so far.

Today's lunch- blanch duruka as you do with the ota (freshwater ferns), chopped cucumbers, carrots and spring onions with fresh coconut milk (miti). Served with grilled tuna steaks and boiled yellow dalo. Kena lovely.

Back with our Vakasigalevu Series. Life has been super busy and chaotic that our meals and meal times have been all over the place. Nice to be a little settled and getting back to routine....for now. I like incorporating local food and in season food in non traditional ways into my cooking - in this case a twist on tavu Duruka

There’s something about walking through the market, seeing what’s abundant, chatting to vendors, and letting that guide what we create

Easier and Yummier thank you think:
1 cup mayonnaise (the better the mayo, the better than dressing)
1/2 tsp garlic , finely minced
2 anchovy fillets
2 tbsp fresh lemon juice
1 tsp Dijon mustard (or yellow mustard if you can’t find dijon - add extra tbsp lemon)
1 tsp Worcestershire sauce
1/2 cup grated parmesan cheese
3 - 4 tbsp milk (to adjust consistency)
1/4 tsp salt
1/4 tsp Black pepper
GARLIC CROUTONS
2 - 3 slices white bread , 2/3” / 1.5cm thick
1 garlic , cut in half
1 tbsp olive oil
1/4 tsp salt
1 sprig rosemary (optional)
SALAD
150g streaky bacon , cooked and chopped
10 cups lettuce , chopped, wash & dried (1 large, 2 medium, 3 small)
Freshly sliced parmesan , for garnish (we use potato peeler for this)
OPTIONAL EXTRAS - CHICKEN & EGG
2 - 4 eggs , cooked to your taste, peeled and halved
500g / 1lb chicken breast fillets (2 pieces)
1/2 tsp EACH salt and pepper
1 tbsp olive oil - method in comment
