My little GF breakfast hack
Since having my thyroid removed, I’ve become much more conscious of what I eat and how different foods make me feel. For me, gluten is one of the biggest enemies when it comes to my overall wellbeing; physically, mentally, and especially my gut health.
So I’m constantly trying to find things that are easy, sustainable and realistic enough to keep me on track.
Because life is busy. And when you’re a mum and a wife, you somehow make sure everyone else is fed, organised and looked after before you even think about yourself.
This is one small way I’ve learnt to look after me too.
My GF protein breakfast pots - They all start with the same simple base:
Greek yoghurt + protein powder + chia seeds + frozen mixed berries.
And the best part? I can make up to two weeks’ worth in one go and FREEZE them.
I keep two in the fridge. Every time I take one out to eat, another comes down from the freezer to thaw. No thinking. No morning prep. No excuse to grab something random because I’m busy.
Some mornings I eat it exactly as it is. Other mornings, like today, I add a little banana especially when the bananas are from our own garden some cinnamon, and if I want a bit of crunch, a sprinkle of cacao nibs.
Nothing fancy. Just good food that works for my life.
A good friend of mine Julie Majors , who is both a foodie and a total food geek, has a tagline that I absolutely love:
“Life is hard; food doesn’t have to be.”
And honestly, that’s exactly what I’m trying to do these days. Make looking after myself just a little bit easier.
