spuma is one of those things that looks complicated but really isn't.
You just need a siphon and your cream chargers, and you're good to go 🍊🍋🍈
Citrus Espuma 40 ml egg white 60 ml grapefruit juice 20 ml lime juice
Mix it all in the siphon, charge it up, give it a quick shake and leave it in the fridge for 30 min. That's literally it.
Serve it over whichever cocktail you're making and thank us later 🍹
