Been on a rescue today. My first attempt had stalled at around 10.4% when it had the potential of around 16%, so I've executed a rescue plan.

Made up 200ml water with a tbsp of honey, sprinkled yeast, left for 15 mins, gave a good swirl then left for 30. Added 5ml of the must, swirled and left for 15, added 10ml must, swirl, left and repeated until it was around 50-50 (5 1/4 hours later) then add it back to the demijohn, airlock and leave. Hopefully ill see some airlock activity within the next 2 days to see if this has worked. On the plus side, as i added extra water, it meant that I had to leave some mead out to make room. Guess who's having a little tipple? 🤣🤣 Tastes decent enough for now, but needs to finish and ageing

Hilltop honey mead has finished fermenting now, sitting at around 11.3%

Racked it off into a new demijohn and added a Campden tablets and some potassium sorbate to stabilise so I can back sweeten if I feel its needed as its very, very dry. Gonna let it sit for a month to age then will bottle it.

The black hives matter honey mead is still going...slowly. currently sitting at around 10.4% but is tasting good so probably wont need to age for too long. Thinking it'll be ready by the end of July 🤞

Checked on my latest batch this morning properly. Theres been no airlock activity for a few days and its looking pretty much done. Going to check the gravity tomorrow as im off out now. Will put it back for a week and check again. If its not changed ill rack it off.

Think i might do another one using store bought honey after this one to make sure I get it right, then will go back to using proper local honey again

Ok, so its been a couple of weeks since I started and I have realised I have made a bit of a c**k up. I didn't put any yeast nutrients in when I started so the yeast is going to struggle a bit but will still work, just be a bit harsh. Just means that I will have to age it longer for the harshness to hopefully mellow out.

I have bought some hillside honey for my next batch, rather than possibly waste good quality honey whilst I learn what im doing properly
