The Cambridge Classic was all about refreshing our bbq skills as it had been a hot 🔥 minute since the last competition. The commute time of 2mins also made it a nice gentle slide back into it.

Our Gilmours Hamilton supplied protein all looked really good with the best one on the day an unlucky 13th for brisket.

Heatbeads delivered the consistent heat we needed to run the beast of an Octopit, thanks to the More Better BBQ Team for letting us borrow this sweet unit.

As always the thing that keeps us coming back to competition bbq year after year is the fellow competitors. Massive congratulations to Troy from Beers BBQ, Smokey Fish and Carbon Addiction for the wins.

Special mention to Meat Mauraders who cooked a fantastic pig 🐖 on Sunday and took out 🥇first place in the Whole Hog cook.

It is no secret I have a love of pork and 🫘 beans. Be it, Boston baked, Ham and white bean casserole or even a cheeky winter soup. Smoked up 4 of these to speed up my dinner options during the week. Brined in a basic brine overnight, then a rub down and smoked low and slow using Heat Beads lump. Highly recommend if you have the time to give this a go.

Finally managed to find a little me time in between winter sports and a new business to fire up the new pit.

Ribs and pork butt from Gilmours Hamilton, along with a lamb flap I was gifted from a friend, treated like boneless ribs and wrapped with a mint jelly and lambstock mix.

Sides were the star of this dinner with cowboy corn, GF/DF Mac N Cheese, Potatoe salad, homemade slaw and a homemade GF Focaccia bread.

All cooked over Heat Beads lump charcoal.
