We got a new fungi cookbook so we thought we would try an easy recipe for lunch today. It was pretty good. I thought I'd share if anyone wanted to try it out.
Ingredients for 2 people
1/2 pound lion's mane, trimmed and sliced
4 slices bread
4 slices cheddar cheese
1 tbsp butter
1 tbsp olive oil
Salt and pepper, to taste. Add additional seasoning for more flavor if you don't want it kind of bland.

Directions:
Heat a large skillet over medium-high heat.
Add butter and olive oil to the skillet.
Add lion's mane and cook for about 5 to 7 minutes, until tender.
Season with salt and pepper to taste.
Place a slice of cheddar cheese on each slice of bread.
Add the cooked lion's mane on top of the cheese on one slice of bread.
Top with the other slice of bread, cheese down.
Grill the sandwich on both sides until the cheese is melted and the bread is golden brown.
Serve hot, enjoy.

Happy, Hopefully, snow day mush family!
Our products are about to be featured at another farm store, and we are so excited to announce it!
Sipsey Creek Farm is located just north of Double Springs, nestled right up next to Bankhead National Forest.
The time and effort these folks have put into their farm is apparent as soon as you pull onto their property. Peacox, turkeys, chickens, pigs, goats, a big baby named Cora, and an adorable little sheep named Lil'Bit is usually the welcoming party!
Andrea and her crew offer:
AirBnB glamping in next level, very cozy yurts, that have access to camp bathrooms at each site, as well as a very cool bathhouse that offers hot water.
Andrea is also a master beekeeper, and her bees make some of the most delicious honey around.
They offer freeze dried candies of all kinds, our favorite is the peanut brittle, but the snickers is a close second.
They have some top shelf homemade soap.
They Homestead, and best believe come spring their garden is going to be popping!
They offer scheduled tours of the farm spring-fall if you feel like rubbing a pig belly, petting a goat, or trying to mimick the noise of a peacock.

This shrimp pasta we cooked the other night was probably one of the best I've ever had. The blue oyster we added made the dish even more flavourful. I hope you enjoy!

Ingredients
We used Gluten-free pasta
2 tbsp extra virgin olive oil
1lb shrimp, peeled and tails removed
Kosher salt
Freshly ground black pepper
3 tbsp butter
3 cloves garlic, minced
1 1/2 c halved cherry tomatoes
3 c baby spinach
1/2 c heavy cream
1/4 c fresh grated parmesan
1/4 c basil, thinly sliced
Oyster mushrooms ( optional )
Lemon wedges, for serving (optional) but delicious

Hey mush family!! This sweet talkative little girl wandered into our yard. She is very skinny, playful, and needs a good home. We already have 5 and a guard dog that doesn't like outsiders. We still have a few lbs of Blue Oysters left. They are $8 for 1/2lb $16 for 1lb. We will deliver to Cullman tomorrow. We also have 1/2lb of fresh Shiitake that's ready, and our Lions Mane will be ready to go by next weekend.
Also we have a few Blue Oyster grow bags available for anyone interested in giving the gift of fungi, or wanting to grow your own for $25!
