If you want tips that will get people asking what's on them, these are the ones.

The Maple Bourbon Steak Tips develop a deep, caramelized finish over high heat — the natural sugars in the marinade do their thing on a hot grill and create a glaze you can't fake with a sauce. Sweet up front, smoky on the back end, with that distinct bourbon warmth underneath.

Labor Day weekend is the last real cookout of the summer. Let’s make it a legendary one.

Bring a big cooler and load up on all your absolute favorites. Grab a few pounds of the meats you love to grill, scoop up the house-made sides you can’t get enough of, stack up your favorite deli cheeses, and pick out some ice-cold local beers from the retail wall. If you haven't grabbed one yet, consider this your friendly sign to treat yourself to an incredible lunch this week. There is a noticeable difference between deli meat sliced fresh to order and deli meat out of a vacuum-sealed supermarket bag. Your kids will taste it. You'll taste it.

We slice everything at the counter, to order, to your thickness. Want it thin for a classic sandwich? Thick for a charcuterie situation? Just ask. That's what the counter is for.

Back-to-school means dinner needs to happen fast. This is where our marinated chicken lineup earns its keep.

Lemon Pepper Wings — bright, citrusy, goes fast with kids.
Cajun Breast — a little heat, a lot of flavor. Great sliced over rice or greens.
Steakhouse Thighs — rich and savory, the thigh holds up beautifully in a pan or on the grill.
Marinated Boneless Breast — the weeknight workhorse. Clean flavor, easy to portion, cooks in under 15 minutes.

All four are vacuum-tumbled in-house. You're not getting surface flavor — you're getting a cut that's seasoned all the way through. Open the package, put it in the pan, done. Some nights that's exactly what you need.

It's 5:15 PM. You just walked in the door. The kids need to eat in 45 minutes and you have nothing thawed.

This is exactly when our marinated chicken cuts save dinner.

Take a pack of Steakhouse Thighs or Cajun Breast out of the fridge, put a cast-iron pan over medium-high heat, and cook. Twelve to fifteen minutes. The marinade is already inside the meat — there's no step you're missing. No bag. No overnight soak. No "add to zip-lock and refrigerate four hours."

It's already done. You're just applying heat.

If you want to build your own marinade at home, the formula isn't complicated. Our meat experts can walk you through it in about 30 seconds, but here's the short version:

Oil locks in moisture and carries fat-soluble flavor. Acid — vinegar, citrus, Worcestershire — relaxes the surface protein and lets the flavor in. Seasoning builds the crust and drives the profile.

We make three Signature Spice blends right here in the shop to give you a serious head start:

Flying Butcher Steak Seasoning + olive oil + Worcestershire + a squeeze of lemon = a steakhouse-quality marinade in two minutes.
Flying Butcher BBQ Rub + apple cider vinegar + a touch of oil = a sticky, smoky wet rub that caramelizes beautifully on chicken thighs or pork.
