Now that all the squash is starting to come in, we wanted to share Ashley’s favorite squash recipe. Growing up her mom always made this casserole in the summer and Ashley has been carrying on the family tradition.

🍽️🍴🍽️🍴🍽️🍴🍽️🍴🍽️🍴🍽️🍴🍽️🍴🍽️🍴

1/4 cup melted butter 🧈
1 1/4 pound yellow squash thinly sliced
1 egg beaten πŸ₯š
1/2 cup Mayo
1/2 cup sour cream
1/2 cup shredded sharp cheese πŸ§€
1/4 cup onion πŸ§…
Sprinkle of salt, pepper, and sugar πŸ§‚

Pour melted butter in casserole dish, add squash. Combine egg, mayo, sour cream, salt, pepper, sugar mix well and pour over squash. Top with cheese. Bake at 350 for 35-40 minutes.

We were 99% sure Barry was a rooster. He acts like one, has the big pretty tail feathers coming in and a big comb and waddle. We were waiting for the final confirmation and we got it this morning. 🀣
