Now that all the squash is starting to come in, we wanted to share Ashleyβs favorite squash recipe. Growing up her mom always made this casserole in the summer and Ashley has been carrying on the family tradition.

1/4 cup melted butter π§
1 1/4 pound yellow squash thinly sliced
1 egg beaten π₯
1/2 cup Mayo
1/2 cup sour cream
1/2 cup shredded sharp cheese π§
1/4 cup onion π§
Sprinkle of salt, pepper, and sugar π§
Pour melted butter in casserole dish, add squash. Combine egg, mayo, sour cream, salt, pepper, sugar mix well and pour over squash. Top with cheese. Bake at 350 for 35-40 minutes.
