Chicken Queso Potatoes
Makes 4 to 6 servings
5 medium golden potatoes, cubed
2 tablespoons vegetable or canola oil
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/2 teaspoon ground black pepper
1.25 pounds chicken breast, cubed
2 tablespoons unsalted butter
1 (1-ounce) packet taco seasoning
1/4 cup water
12 oz Queso Mama, any variety
Pico de gallo, optional, as desired
fresh cilantro, optional, for garnish
In a large bowl add potatoes, oil, paprika, garlic salt and pepper. Toss until potatoes are evenly coated. Place into an air fryer at 400 degrees Fahrenheit for 25 minutes or until crispy and tender.
Meanwhile heat a large skillet over medium heat and add butter, chicken, taco seasoning and water.
Cook until chicken is cooked through, about 8 minutes.
Microwave Queso Mama according to package instructions and until hot.
Remove skillet from heat, add potatoes to pan, and drizzle with Queso Mama.
Serve with cilantro and pico de gallo, if desired.
