A lesser talked about aspect of sustainability is preservation. Without effective knowledge of preserving a harvest, much of our hard work would go to waste. Without preservation, communites were once left hungry in the winter. Growing up we ate from mason jars all the time, we had a whole room dedicated to shelving and storing them. Beans, tomatoes, potatoes and everything in between.

One of our biggest goals here at Cane Brake Farmstead is building a system that allows us to distribute our abundance all year long. Canning is the obvious answer in our minds.

Watermelons are still available while supplies last! One staple summer snack we keep around is this beautiful Watermelon Pico! Sweet, tangy and refreshing, a perfect bite for a hot summer day. Just add diced watermelon to your favorite pico de gallo (home made with fresh tomatoes is always best) and let chill for 2 hours in the fridge, or just until you lose patience, in our case.
