It's bulk beef season, and with that comes a lot of questions — so let me take a minute to explain where our beef actually comes from.

A lot of you trust me because you see me here and in the store every week. I don't take that lightly.

But that trust was built because I first trusted some really great cattlemen who taught me a lot when we were just getting started.

We do have our own small herd of Dexter and Jersey cattle on our 30 acres — but it's a limited supply, and that beef usually goes to the same families year after year.

When we opened the farm store, we partnered with two local farmers right here in Centralia — people who helped us get started and who we genuinely trust. They raise their cattle on the same feed program we use, so the quality stays consistent across everything we sell.

All of our beef is:
- Locally raised
- No routine antibiotics (any animal that needs treatment is cared for and not sold through our program)
- Traditional vaccines only — no mRNA

If we wouldn't feed it to our own family, it doesn't come through our door.

Right now we have quarter beef available — cut, packaged, and ready for your freezer. A simple mix of steaks, roasts, and ground beef.

If you've been thinking about filling your freezer, now's the time. Message me or stop by Saturday 10–2.

Do we only sell bulk meat? Nope!

You can shop our farm store every Saturday from 10–2 and grab beef, pork, and chicken by the cut — just like a normal grocery store, just way better.

BUT. Bulk is seasonal, and right now? We're smack in the middle of bulk season.

If filling your freezer has been on your to-do list, this is your sign to get off the fence and get on the list — spots fill up every single year without fail.

Stop in this Saturday or shoot me a message and I'll walk you through exactly what we've got. We love talking meat. 🥩

Have you ever brought home steaks from the big box stores…

…and been so disappointed?

You spent good money,
you were excited for a nice meal at home,
and it just didn’t taste the way you hoped it would.

That’s frustrating.

That’s the difference with locally raised beef.

Every meal just hits different.

I’ve had customers tell me:
“Even my tacos taste better now.”

Whether it’s:

A slow cooked roast
Tacos on a busy night
A brisket on the smoker
Or a steak in a cast iron skillet

It actually tastes like something.

Like a meal you’re proud to serve your family.

I know this can feel intimidating at first.

Buying directly from a farmer…
figuring out who to trust…
wondering if you’re making the right decision with your money.

You work hard for every dollar.
Of course you want to get it right.

That’s exactly why I always recommend starting with a quarter beef.

It’s the easiest way to:

Try it without feeling overwhelmed
See how your family actually uses the cuts
And experience the difference in quality for yourself

Because here’s what I’ve seen over and over again—

When people make the switch to buying beef this way,
it’s not just about “buying in bulk.”

It’s about:

Knowing where your food came from
Cooking meals that actually taste good every time
And not second-guessing what you’re feeding your family

The quality really does speak for itself.

This is what freedom looks like.

She’s a mom of 2 (with one on the way), and she has a half beef in her freezer right now.

Can’t you just feel the relief?

She cares deeply about the quality of food she’s feeding her family.
So once a year, she fills one freezer with beef and another with pork—and she’s done.

No more reading labels.
No more wondering where it came from.
No more running to the store trying to figure out supper.

Just one decision… and she knows she can trust what she’s feeding her family.

And here’s the part most people don’t think about:

She also locked in her price.

While beef prices keep going up,
she already has a freezer full at around $10–11/lb.

For most families, that means you’re set for **months—even up to a year—**without worrying about buying beef again.

Once you experience that kind of freedom, it’s hard to go back.

The beef we’re selling right now isn’t just “random local beef.”

It’s coming from a farmer we’ve known and trusted for years.

He actually helped us get started when we were first building our farm—and to this day, he raises his cattle using the same feed program we use for our own.

That matters.

Because it means:

-We know exactly how these animals are raised
-We trust the quality enough to feed it to our own family
-And we feel good about bringing it into our store

This is the same beef we sell in our store every Saturday.

It’s the beef people come back for—especially the steaks.

We hear it all the time:
“How is this so tender?”
“This actually has flavor.”

That’s the difference when it’s raised right and processed well.

Once you’ve had beef raised locally like this, it’s really hard to go back to store-bought.

There’s only 1.25 beef left in this group going to T&S Locker in Paris.

If you’ve ever thought about buying bulk beef but weren’t sure where to start—this is it.

Let’s talk about a quarter beef 👇

👉 This is what I recommend to first-time buyers.

Here’s a real example so you know exactly what to expect:

Hanging weight: ~216 lbs
Take home: ~119 lbs of packaged beef

Cost breakdown:

$250 deposit to reserve
$1,080 to us (beef)
$216 to the locker (processing)

Total: $1,296

That comes out to about $10.90/lb in your freezer for a mix of:

Ground beef
Steaks
Roasts

👉 I’ve included a graphic so you can actually SEE the cuts you’ll get.

No guesswork. No surprises.

Important:
The $250 deposit goes toward your total—it is not an extra fee.

So if your total is $1,296, you’ve already paid $250 and will owe the remaining balance to us when your beef is ready.

You’ll pay the butcher (about $216) separately at pickup.

If you've been following along this week and thinking "okay, this sounds great but I wouldn't even know where to start" — you're not alone. That's honestly the most common thing I hear.

So here's your easy next step: come see me at the farm store tomorrow.
I'll have flyers that walk through what to expect, cut sheets you can look over or take home, and I am more than happy to stand there and fill one out with you. No pressure, no rush — just a conversation. Once you see it laid out it's way simpler than people expect.

And if you're not quite ready to commit? Grab a few cuts tomorrow and taste it first. That's honestly the best sales pitch I've got. This is what we do, and we're proud of it.

We're open Saturday 10–2. If bulk beef or pork has been on your mind, this is the easiest way to get your questions answered.

Or just stop in and say hi — we'll have plenty to choose from.

A few months back, a customer named Mark told me he buys a half hog at a time from us.
His reason? Meal planning. He uses it to teach his sons how to plan ahead — pull from the freezer, cook at home, eat well. Faster, tastier, and a whole lot cheaper than the alternative.
I think about that conversation a lot. It's never really about the pork — it's about what having it ready does for your family.

Our Story

We are a small regenerative farm in Centralia, Mo. We started our dream farm in 2015 and have been growing since. It all started as an accident, we wanted to raise meat for ourselves and looked into selling to a large company as well to make an extra income so Erica could continue to stay at home with our children. When we were big enough to sell to them, they didn’t need any more hog farmers. But along the way we had created a small customer base, we decided to continue to sell to the community instead. This has been such a humbling experience to feed our community. We now have over 150 families a year who trust us to provide the most delicious and humanely raised meat, eggs and milk for their table.
