Soup season is back my and we have shanks and chuck back in stock for slow cold weather cooking. Have you seen those viral recipes for soup using no water? I tried a French onion with beef version tonight. I just sliced some shank meat (and tossed the bones in my bone broth) seared it, buried it under a ton of onions (that I wilted down in the same pan as the beef) with some herbs and shoved it in a low oven for 2.5 hours. Came out more like stew, but gosh was this good! The beef makes it a heartier meal. You can do it with chuck meat as well. It comes out so tender and flavorful!
