We are absolutely THRILLED to introduce the newest member of the Gilligan's family — Chef Byron Cochrum!

Chef Byron's journey to our kitchen is anything but ordinary. A Wyoming native, he honed his craft in culinary school before his sense of adventure took him across the globe as a merchant mariner, cooking his way through ports across the United States and South America. That wanderlust eventually led him to Rocamadour, France, where he served as Chef de Cuisine at the prestigious Hotel Le Bois d'Imbert — bringing world-class European technique and a truly international palate to everything he creates.

Now, he's bringing ALL of that to Gilligan's Brewery — and we couldn't be more excited about what's coming.

Chef Byron's arrival marks an exciting new chapter for us. Expect elevated, thoughtfully crafted dishes that pair beautifully with our brews, rooted in global inspiration but made right here in Cincinnati. This is the direction Gilligan's is headed, and we are HERE for it. 🙌
