Most colleges don't know how much of their waste stream comes from the dining hall until someone actually weighs it. At one university, dining accounted for 80 to 90 percent of everything the university collected as waste. That number holds up across campuses of every size, which means dining is often the single biggest lever a college has for hitting sustainability goals.
