The freeze dryer is loaded up with lots and lots of garlic today! There’s nothing quite like the smell of fresh garlic filling the kitchen.

And because apparently the garlic needed a little company… one lonely tray of carrots made its way in too.

Christmas Pickles Day 3

Today the pickles took the next step in the process, they are now soaking in their sweet cinnamon syrup, where they will spend the next 24 hours soaking up all that delicious flavor.

Tomorrow night is canning time, and we will finally have jars ready to line the pantry shelves.

This weekend was filled with good friends, good food, and lots of canning!

A friend was in town, while her car was being worked on, and we spent some time in the kitchen making Mint Apple Jelly. Then she jumped right in to help me start a batch of our Christmas Pickles.

I never realized just how many cucumbers it takes to end up with 7 pounds, after peeling and removing all the seeds! It was definitely a lot more work than I expected, but having an extra set of hands made all the difference.

Homesteading is always more fun when you can share it with a friend. Thank you for all your help, it was a productive weekend! 🍎🥒

🌱 The garden continues to produce well, which means another day of freeze-drying!

Today's harvest going into the freeze dryer:
Tomatoes
Bell Peppers
Banana Peppers

We are working hard to preserve the harvest while everything is coming in at once. Freeze-drying is one of our favorite ways to keep that fresh garden goodness on hand for future meals without letting any of it go to waste.

The tomatoes will be turned into tomato powder, which is one of our favorite pantry staples. We use it in sauces, soups, chili, and just about anything that needs a little extra tomato kick.

The bell peppers will be added to the other freeze-dried vegetables we've already put away to make our homemade veggie blend seasoning. We use it often when cooking ground venison, chicken, soups, sauces, and other family meals.

The banana peppers are an experiment this year. We're curious to see how they turn out freeze-dried and what recipes they'll work best in.

One of the most rewarding parts of gardening is watching the pantry fill up with food we've grown ourselves. The garden has definitely been keeping us busy this season, but we're thankful for the abundance it has provided. Finding ways to preserve the harvest means we can continue enjoying our homegrown food all year long. Nothing beats growing, preserving, and eating food from your own backyard!

It is finally time to start stewing garden tomatoes, peppers, and onions!

There's something special about turning a basket of homegrown vegetables into meals for the months ahead. The garden has worked hard all season, and now we're enjoying the harvest one jar and one pot at a time.

Nothing beats the flavor and satisfaction of eating food you've grown yourself. 🍅🫑🧅

The garden is producing well, which means it's time to start freeze-drying veggies for the pantry!

Today's harvest going into the freeze dryer:
Green Griller Squash – 1 squash filled 3 trays
Green Bell Peppers – 12 peppers filled 1 tray
Cucumbers – 4 large cucumbers filled the last tray

The real MVP of prep work was the Pampered Chef Rapid-Prep Mandolin. It made quick work of slicing everything and getting it ready for the trays.

These are just a few of the ingredients that go into my homemade veggie blend. We use it all the time when cooking ground venison, chicken, pasta sauces, soups, and other meals throughout the year. It's a great way to preserve the garden harvest and keep homegrown flavor on hand long after the growing season ends.

Nothing beats putting away food you grew yourself!

Yesterday's thunderstorms rolled through and did a little damage to the garden. Thankfully, there was no other damage around the homestead, and all of the chickens are safe and doing well. We definitely needed the rain, so we will gladly take a little garden cleanup in exchange for the much needed moisture.

Some of the garden damage is recoverable and some of it isn't, but that's part of gardening and homesteading. I'm especially thankful the cucumber, pepper and tomato plants weren't uprooted. We did learn a lesson, next season we will be building a new cucumber trellis that's both stronger and taller!

Most of our sunflowers were knocked over by the storms, so we cut the heads this morning and have them drying.

Before the heat set in today, we harvested another nice haul from the garden:
🥒 About 50 cucumbers
🫑 Bell peppers
🌶️ Banana peppers
🌶️ Jalapeño peppers

Our Green Griller squash plants are also producing well, and tonight we'll be heading back out to pick green beans.

The jalapeños all went into the freezer today so we can start working on a fresh batch of Cajun Candy soon!

Homesteading keeps us humble, but we're thankful for the rain, every harvest, and every lesson the garden teaches us.
