Fuyu Fest is a Portland, Oregon sake festival, now in its fourth year, combining an exploratory, educational tasting of just over 100 curated sakes—featuring smaller producers, exceptional finds, story-driven bottles, and house favorites. Local food, coffee, and specialty vendors will be available from 1 p.m. (great for arriving early), followed by guided tasting with sake professionals and makers/importers from 2–5 p.m. This year, the festival spotlights music and sake through live improvisational performances inspired by special bottles.
20% of ticket sales is donated to Ikoi no Kai, a SE Portland senior lunch and community program.

SUNFLOWER DOBUROKU
Sunflower Sake is a sake shop/tasting room based in Portland, Oregon headed by Nina Murphy. This Doburoku was made in very small quantity for in time for their so we will have limited quantity for sale at our tasting room. Now available at Sunflower Sake in Portland and available starting this Friday (2/20) at our tasting room.

SUNFLOWER SAKE
Nina visited our brewery several times and left us a very positive impression with her love for sake and her desire to support American craft sake industry. She even took our sake all the way to Japan a couple times to pour our Eclipse sake at sake events in Japan along with other amazing US made sake. Like us, she fell in love with Doburoku and asked us to make a custom Doburoku for her brand in time for their sake fest called FUYU FEST. Due to our busy schedule, we usually don’t accept such requests but we had to make exception and we were honored to collaborate with her. She requested for her Doburoku to be made with organically grown CA rice called Luna Koshihikari and we agreed (disclaimer: although this Doburoku is made with 100% Luna Koshihikari rice, this does not mean that it is an organic product). We felt that using organically grown rice to make Doburoku made sense as none of the rice is wasted to polishing or filtering, and you can appreciate and enjoy the full flavor of the fermentation of the rice. We made slight adjustments to the recipe but for the most part it’s the same recipe as our original Doburoku except the rice variety, so for those that enjoy Doburoku, it will be a fun tasting experience when you try them side by side. Beer Label Design Upgrade: Yuzu Witbier

Yuzu is a fruit that our brewer was hesitant to use in any of our main lineups. He doesn’t like to follow trends and doesn’t like to use overused ingredients like matcha. While he still believes matcha is just gimmicky and doesn’t add anything positive to the beer, he was convinced to use yuzu because it actually has a unique and memorable flavor/aroma. He noticed that alot of yuzu beers out there were lagers or blondes, but he felt that wheat ale would complement the flavor of the citrus better. Inspired by one of his favorite beer styles - Belgian white, Yuzu Witbier is white wheat ale brewed with yuzu and coriander seeds. We’re glad he brewed this one as it’s now one of our best selling beers.

Label design for this beer was inspired by one of the cutest photos we’ve seen of a capybara with yuzu on its head taking a hot yuzu bath. Giving capybaras a hot yuzu bath seems to have started in a particular zoo in Shizuoka prefecture but now done at several zoos in Japan to comfort them and soothe their skin. While wheat can be part of capybara’s diet, there’s no other reason we chose this design except…it was cute.

Beer Label Design Upgrade: Oolong Island

A play on the word of the cocktail - long island iced tea, Oolong Island is the second beer recipe we ever made after Ginjo 7, and honestly still surprised how popular it has been to this day. This beer is one of the recipes that started even before Nova Brewing Co. existed. Our brewer loved getting oolong tea from the vending machines in Japan and always felt that the roasty aroma would complement the maltiness in beer. When he became a brewer at Nova, he started to work on the recipe but got an advice from the previous brewer that only adding the tea might end up too bitter. He said that he loved to drink oolong peach iced tea and we both agreed that adding fruit might make it more balanced so peach was added. This recipe took us many batches to get the balance right between the peach and the tea but current recipe is where we feel it to be just right.

The label design for this beer was one of the hardest back then and even this time it was hard. We wanted the design to depict oolong tea and peach, and because the flavor is mysterious (as in it makes you wonder what it tastes like), we wanted the design to be mysterious as well. This design is actually inspired by the first tattoo our brewer got while living in Thailand (he lived there for 4 years during his 20s). His favorite flower is lotus flower due to its meaning of awakening and rebirth no matter how muddy the waters are. The tattoo artist had an original artwork of lotus flower with hidden buddha face and immediately fell in love with the artwork and decided that would be his first tattoo (he was young and wannabe hippie back then).

Oolong Island label depicts a mysterious oolong tea tree that grows peaches and if you look closely, you may find hidden face of a buddha.

Beer Label Design Upgrade: Ginjo 7 (Blue Label)

Ginjo 7 was also inspired by Belgian beer branding and our brewer particularly liked how some Belgian beer brands used same label design for different styles of beers distinguished by different colors. So Ginjo 7 became a series of project to explore different styles of Belgian beers fermented with sake yeast #7, and distinguished by different label colors. Ginjo 7 (Blue Label) is Tripel Ale brewed with 3 types of grains and to give it a unique flavor, we brewed it with a blend of sansho pepper (Japanese pepper similar to sichuan pepper), star anise and coriander seed. This blend of spices was our secret recipe for this beer but we are revealing it for the first time! The waves were chosen for two reasons: because the ocean is blue and, and this beer has big bold flavors like big bold waves.

Ginjo 7 series also had a red label (brown ale) and a black label (quadrupel ale) also fermented with sake yeast #7, but we haven’t brewed these in a while because we felt we had too many beers and sake for brewery our size and our brewers were getting burnt out.

Beer label design upgrade: Ginjo 7 (White Label)

We’ve been quietly upgrading our beer label designs one by one, and we were waiting for all the old labels to be replaced with the new ones until we made an announcement. We haven’t changed our beer label designs since 5-6 years ago but with the tasting room upgrade, we felt it was about time.

Ginjo 7 brand name was created for a few reasons. First of all, we wanted to introduce sake terms to the beer drinkers and noticed that World Beer Cup officially has a category called “Ginjo Beer.” They define this category as “beers that utilize sake yeast to produce specific, delicate esters and aromatic profiles often described as fruity or floral, similar to premium ginjo sake.” The word ‘Ginjo’ has several meanings in the sake industry but the particular meaning we went for was ‘Ginjo-ka’ (fruity/floral aroma of sake). Because the main point of our beer was that we brewed it with sake yeast and steamed rice, we felt ‘Ginjo’ was the perfect name for our first signature beer as the sake yeast produced fruity esters different from beer yeast.
The addition of ‘7’ was because we used sake yeast #7 that we imported from Japan and it was also a reference to Akira Kurosawa’s Seven Samurai movie which our brewer is a fan of. We originally actually planned to add a katana (samurai sword) to our label but was not approved by our boss Emiko. Apparently some Japanese people think samurai swords are “dasai” (old-fashioned/tacky). She eventually learned that Americans think katanas are cool and this time approved the addition on our label.

Tasting Room 2.0 Continued
Because our brewery is in a next door unit to our tasting room, sometimes we get question asking where is the brewery or if our products are made here. We wish we can break down the wall between the units so you can see or access the brewery from the tasting room, but the landlord wouldn’t approve. So we decided to show some of the process of sake brewing and briefly explain the process through photos and videos. We hope to see you walking around the wall not only to see our products on sale but to see and read about the processes and ingredients involved with sake brewing.

Our tasting flights are the most ordered item as most people come to taste our products. We’ve always felt 6 items on a single flight was way too many and didn’t allow for best tasting experience. When there’s so many items on a single flight you lose focus on the qualities of each item and temperature won’t be optimal as well. We are glad to have finally changed it to 3 items on a tasting flight and streamlined the tasting experience by creating already set Nova signature sake flight and signature beer flight. These are recommended for those visiting us for the first time and want to taste products that represents what we do. Ofcourse there’s also option to select 3 items to custom make your own tasting flight.

For the new tasting flights, we had a new custom flight board made with our seal (hanko) and also made new glasses to enhance the tasting experience. These are award-winning glasses shaped to concentrate aroma to the top and is perfect size for tasting both sake and beer, engraved with our slogan “brewed with the force of nature.” These glasses cost just as much as the regular sized glasses but apparently they are popular for taking togo as we seem to be constantly restocking our shelves.
