Slow Cooker Creamy Chicken Parmesan Pasta

Ingredients

· 2 lbs boneless, skinless chicken breasts
· 12 oz rotini pasta (uncooked)
· 2 cans (10.5 oz each) cream of chicken soup
· 8 oz cream cheese, softened and cubed
· 2 cups chicken broth
· 1 cup heavy cream
· 1 cup grated Parmesan cheese
· 2 cups shredded mozzarella cheese
· 4 cloves garlic, minced
· 1 teaspoon Italian seasoning
· 1 teaspoon garlic powder
· 1 teaspoon onion powder
· 1 teaspoon salt
· ½ teaspoon black pepper
· 1 cup crushed Ritz crackers or panko breadcrumbs
· 4 tablespoons unsalted butter, melted
· Fresh parsley, chopped (for garnish)

Instructions

1. Place the chicken breasts in the bottom of the slow cooker.
2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, softened cream cheese, minced garlic, Italian seasoning, garlic powder, onion powder, salt, and black pepper until relatively smooth. Pour the mixture evenly over the chicken.
3. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is cooked through and tender.
4. Carefully shred the chicken directly in the slow cooker using two forks.
5. Stir in the uncooked rotini pasta, ensuring it is mostly submerged in the liquid. Cover and cook on HIGH for an additional 20–30 minutes, stirring halfway through, until the pasta is tender.
6. Reduce the heat to LOW (or turn off the slow cooker). Stir in the heavy cream, grated Parmesan cheese, and 1 ½ cups of the shredded mozzarella cheese until completely melted and creamy.
7. In a small bowl, mix the crushed crackers (or panko) with the melted butter. Sprinkle the mixture evenly over the top of the pasta, followed by the remaining ½ cup of mozzarella cheese.
8. Cover and cook on HIGH for 10–15 minutes, until the cheese is melted and the topping is golden. For a deeper golden crust, transfer the slow cooker insert (if oven-safe) to a broiler for 2–3 minutes, watching closely to prevent burning.
9. Garnish generously with fresh chopped parsley and serve hot straight from the slow cooker.

Servings: 6–8
Prep Time: 15 minutes
Cook Time: 5–6 hours on LOW (+ 45 minutes for pasta and topping)
Total Time: About 7 hours

💡 Pro Tips:

· Room Temperature Cream Cheese: Make sure your cream cheese is fully softened before adding it to the slow cooker. This ensures it melts smoothly into the sauce without leaving lumps.
· Pasta Timing: Pasta can easily become mushy in a slow cooker. Adding it in the final 30 minutes of cooking is crucial for the perfect al dente bite. If your slow cooker runs hot, check it at 20 minutes.
· The Topping: The combination of buttery crushed crackers and melted cheese is what gives this dish its signature golden, crispy top. Don't skip the broiler step at the end if you want that beautiful, restaurant-quality finish.
· Make it a Meal: Serve with a side of steamed broccoli or a simple Caesar salad to balance the richness of the creamy pasta.

Slow Cooker Meatloaf & Vegetable Dinner

Ingredients

· For the Meatloaf:
· 2 lbs ground beef (80/20)
· 1 cup breadcrumbs
· 2 large eggs
· 1 small yellow onion, finely diced or grated
· 3 cloves garlic, minced
· ½ cup whole milk (or beef broth)
· 2 tablespoons Worcestershire sauce
· 1 teaspoon salt
· ½ teaspoon black pepper
· 1 teaspoon dried thyme
· 1 teaspoon dried parsley
· For the Vegetables:
· 1 ½ lbs baby Yukon Gold potatoes
· 1 lb baby carrots
· 12 oz fresh green beans, ends trimmed
· 2 tablespoons olive oil
· 1 teaspoon garlic powder
· 1 teaspoon onion powder
· ½ teaspoon salt
· ½ teaspoon black pepper
· For the Glaze:
· ¾ cup ketchup
· ¼ cup packed brown sugar
· 1 tablespoon apple c***r vinegar
· 1 tablespoon Worcestershire sauce
· 1 teaspoon Dijon mustard
· Fresh parsley, chopped (for garnish)

Instructions

1. In a large bowl, combine the ground beef, breadcrumbs, eggs, grated onion, minced garlic, milk, Worcestershire sauce, salt, black pepper, dried thyme, and dried parsley. Mix gently until just combined.
2. Shape the meat mixture into a firm oval loaf.
3. (Optional but recommended for easy removal) Create a sling using aluminum foil or parchment paper and place it in the bottom of the slow cooker.
4. In a separate large bowl, toss the baby potatoes, baby carrots, and green beans with olive oil, garlic powder, onion powder, salt, and black pepper until evenly coated.
5. Place the seasoned vegetables around the sides and bottom of the slow cooker insert.
6. Nestle the meatloaf into the center of the slow cooker, on top of the foil sling if using, surrounded by the vegetables.
7. In a small bowl, whisk together the ketchup, brown sugar, apple c***r vinegar, Worcestershire sauce, and Dijon mustard. Pour half of the glaze evenly over the top of the meatloaf.
8. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the meatloaf reaches an internal temperature of 160°F and the vegetables are fork-tender.
9. During the final 30 minutes of cooking, brush the remaining glaze over the meatloaf.
10. For a caramelized top, carefully transfer the meatloaf to a foil-lined baking sheet and broil for 2–3 minutes, watching closely to prevent burning.
11. Let the meatloaf rest for 10 minutes before slicing. Garnish the entire dish generously with fresh chopped parsley and serve hot.

Servings: 6
Prep Time: 20 minutes
Cook Time: 6–7 hours on LOW
Total Time: About 7 hours 20 minutes

💡 Pro Tips:

· The Foil Sling: Meatloaf can be tricky to lift out of a slow cooker. Making a foil or parchment paper sling underneath it allows you to lift the entire loaf out cleanly without it falling apart.
· Don't Overmix: Mix the meatloaf ingredients just until they come together. Overmixing activates the gluten in the breadcrumbs and makes the meatloaf dense and tough.
· Even Veggies: Cut any larger baby potatoes in half so all the vegetables cook at the same rate.
· Thicker Sauce: If you prefer a thicker gravy to serve with the meatloaf, pour the cooking juices into a small saucepan, whisk in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water), and simmer until thickened.

Slow Cooker Creamy Macaroni & Cheese

Ingredients

· 16 oz elbow macaroni, cooked just under al dente
· 1 can (12 oz) evaporated milk
· 1 ½ cups whole milk
· ½ cup heavy cream
· ½ cup unsalted butter, melted
· 3 cups shredded sharp cheddar cheese
· 8 oz Velveeta cheese, cubed (or 4 oz cream cheese)
· 1 teaspoon salt
· ½ teaspoon black pepper
· ½ teaspoon smoked paprika (plus extra for garnish)
· ½ teaspoon dry mustard powder (optional)

Instructions

1. In a large pot of salted boiling water, cook the elbow macaroni for 2 minutes less than the package directions. Drain well and set aside.
2. In the slow cooker, whisk together the evaporated milk, whole milk, heavy cream, melted butter, salt, black pepper, smoked paprika, and dry mustard powder (if using).
3. Add the shredded cheddar cheese and cubed Velveeta (or cream cheese) to the slow cooker. Stir to combine.
4. Add the cooked macaroni to the slow cooker and stir well until the pasta is fully coated in the milky mixture.
5. Cover and cook on LOW for 1 ½ to 2 hours, stirring every 20–30 minutes to prevent the pasta from sticking to the bottom and to ensure the cheese melts evenly.
6. Once the cheese is completely melted and the sauce is thick, creamy, and glossy, turn the slow cooker to the WARM setting.
7. Garnish with an extra dusting of smoked paprika and black pepper. Serve hot straight from the slow cooker.

Servings: 8
Prep Time: 10 minutes
Cook Time: 2 hours on LOW
Total Time: About 2 hours 10 minutes

💡 Pro Tips:

· Avoid Mushy Pasta: Do not overcook the macaroni on the stove. Cooking it 2 minutes less than the package directions ensures it finishes cooking perfectly in the slow cooker without turning into mush.
· The Secret to Creaminess: Evaporated milk is the secret weapon for slow cooker macaroni and cheese. It withstands heat much better than regular milk and prevents the sauce from curdling or separating.
· Cheese Choices: For that perfect, glossy cheese pull shown in the photo, a combination of sharp cheddar for flavor and Velveeta (or cream cheese) for ultimate meltability is key. Avoid pre-shredded bagged cheese, as the anti-caking agents prevent smooth melting.
· Stirring is Key: Because slow cookers heat from the bottom, you must stir the macaroni every 20–30 minutes to prevent the pasta from sticking and burning on the bottom.

· 2 ½–3 lbs beef chuck roast, cut into 1 ½-inch cubes
· 2 tablespoons olive oil (for searing)
· 1 large yellow onion, sliced
· 4 cloves garlic, minced
· 1 tablespoon fresh ginger, grated
· ½ cup low-sodium soy sauce
· ¼ cup packed brown sugar
· ¼ cup honey
· 2 tablespoons rice vinegar
· 1 tablespoon sesame oil
· 1 cup beef broth
· 1 teaspoon garlic powder
· 1 teaspoon onion powder
· 1 teaspoon salt
· ½ teaspoon black pepper
· 2 tablespoons cornstarch mixed with 3 tablespoons cold water (for the slurry)
· Sliced green onions (for garnish)

Instructions

1. Pat the beef chunks completely dry with paper towels. Season generously on all sides with salt, black pepper, garlic powder, and onion powder.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the beef in batches for 2–3 minutes per side until deeply browned. Transfer the beef to the slow cooker.
3. Scatter the sliced onion over the beef in the slow cooker.
4. In a medium bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, sesame oil, beef broth, grated ginger, and minced garlic. Pour the mixture evenly over the beef and onions.
5. Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the beef is incredibly tender and falls apart easily with a fork.
6. For a thick, glossy sauce (like shown in the photo), whisk the cornstarch with cold water until smooth. Stir the slurry into the slow cooker. Cover and cook on HIGH for 15–20 minutes, stirring occasionally, until the sauce has thickened and coats the beef.
7. Taste and adjust the seasoning if needed.
8. Garnish generously with sliced green onions and serve hot over steamed white rice or noodles.

Servings: 6
Prep Time: 15 minutes
Cook Time: 6–8 hours on LOW
Total Time: About 8 hours 15 minutes

💡 Pro Tips:

· Don't Skip the Sear: Searing the beef first creates a deep, caramelized crust that adds incredible flavor to the rich sauce.
· Thicker Sauce: The cornstarch slurry is essential for getting that sticky, glossy texture shown in the photo. Make sure the slow cooker is on HIGH when you add it so it activates properly.
· Spice it Up: For a kick of heat, add a pinch of crushed red pepper flakes or a teaspoon of sriracha to the sauce mixture.
· Make it a Meal: Serve these beef bites over steamed white rice, noodles, or mashed potatoes to soak up every drop of the savory-sweet sauce.

2. Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until deeply golden brown. (They do not need to be cooked through at this point). Set aside.
3. In a medium bowl, combine the dry potato slices and sauce packets from the boxes. Whisk in the milk and sliced butter until well mixed.
4. Pour half of the potato mixture into the bottom of the slow cooker. Layer the seared pork chops on top, then pour the remaining potato mixture over the chops.

· 1 can (14.5 oz) diced tomatoes, undrained
· 1 can (8 oz) tomato sauce
· 1 small yellow onion, diced
· 3 cloves garlic, minced
· 2 cups beef broth
· 2 tablespoons Worcestershire sauce
· 1 tablespoon chili powder
· 1 teaspoon smoked paprika
· 1 teaspoon garlic powder
· 1 teaspoon onion powder
· 1 teaspoon salt
· ½ teaspoon black pepper
· 2 cups shredded sharp cheddar cheese
· 1 tablespoon olive oil
· Fresh parsley or chives, chopped (for garnish)

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and crumbled. Drain any excess fat.
2. Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Transfer the beef mixture to the slow cooker.
3. Add the cubed potatoes and drained kidney beans to the slow cooker, stirring to combine with the beef.
4. In a medium bowl, whisk together the diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper. Pour the mixture evenly over the ingredients in the slow cooker.
5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
6. During the final 20–30 minutes of cooking, sprinkle the shredded cheddar cheese evenly over the top. Cover and let it melt completely until bubbly and gooey.
7. For an extra golden, crispy top (like shown in the photo), transfer the slow cooker insert (if oven-safe) to a broiler for 2–3 minutes, watching closely to prevent burning.
8. Garnish generously with fresh chopped parsley or chives and serve hot straight from the slow cooker.

Servings: 6–8
Prep Time: 15 minutes
Cook Time: 6–7 hours on LOW
Total Time: About 7 hours 15 minutes

💡 Pro Tips:

· Don't Skip the Searing: Browning the ground beef and onions first creates a deep, savory flavor base that makes this casserole taste like it baked all day.
· Even Cooking: Cut the potatoes into uniform, bite-sized pieces so they cook evenly. If the pieces are too large, they may still be firm when the meat is fully cooked.
· Cheese Melting: Always add the shredded cheese at the very end. Adding it too early can cause it to separate and become greasy during the long cooking process.
· Make it Spicy: For an extra kick of heat, add a diced jalapeño along with the onions, or a pinch of crushed red pepper flakes to the tomato mixture.
