Brix tells us how much sugar is in the syrup.

Maple syrup needs to land around 66–67° Brix to be finished properly.

It starts as sap.

Clear. Cold. Almost like water.

Then it runs through this evaporator. The heat slowly pulls the water out, concentrating the natural sugars that were already there.

Nothing added. Nothing flavored. Nothing “maple-inspired.” Just time, fire, and a whole lot of sap!

It’s a slow process, but on days when the steam is thick and the fire’s been going strong, this room smells delicious!

Bacteria are the sugar thieves…

Raw sap is full of natural sugar, and if tanks aren’t cleaned properly, microbial growth starts consuming that sugar before it ever reaches the evaporator.

Less sugar in the sap means more sap required to make the same gallon of syrup.

That’s why we clean this 6,000 gallon tank every time we empty it which is every day!

Sap flows from the trees inside tubes which transfers it into the releaser, which automatically dumps it into the tank.

Once it’s collected, we move it to the evaporator. The evaporator boils off the excess water, leaving behind concentrated maple syrup.

That’s the process in a nutshell!

After the cold snap, we checked the tank and realized how much ice had built up inside.

Before sap can flow, everything has to be clean and ready—so out came the hot water, the hose, and Joash climbing to the top of a very large tank to melt it out.

It’s not glamorous, but this is the part most people never see.

Because before there’s syrup on your table, there’s careful prep behind the scenes to make sure nothing compromises quality.

It doesn’t look bad until you try to walk on it! 🧊

There’s a layer of ice under the snow, which makes tapping on steep ground a little sketchy. We rigged up some makeshift traction shoes to help out.
