For over 75 years the Knowles Family has been growing rice in the fertile lowlands of Glenn County, the heart of California's rice country. Like most rice farmers, they have lovingly cared for their crops, harvested the golden grains and
then sent the bounty off to the commercial mills never to be seen again. When raw, or "paddy", rice comes out of the field the husk, the rough outer layer, must be removed to uncover the delicious grain inside. In modern agriculture, rice hulling takes place at just a few large commercial mills, which then package the product for distribution or ship it off in vast bulk quantities to lucrative overseas markets willing to pay a premium for California's highly regarded sushi rice, often warehousing product for long periods and selling at opportune times to maximize profits. Unfortunately, much of the natural sweetness in the grain will dissipate shortly after milling, and the consumer is unwittingly left with an inferior rice. Using our unique artisan rice mill, we can provide the freshest possible premium rice before the delicate flavors escape the grain.
