Dear Members and Friends of the Triangle Bailliage,

As we prepare to close out the 2025–2026 season, we hope you will join us for an extraordinary evening of food, wine, and fellowship on Sunday, June 7 at Vidrio in Raleigh.

Our season finale, Smoke, Salt & Season, will feature an eight-course dining experience created by Executive Chef Roberto Barth, whose “rustic refined” culinary style blends classical technique, live-fire cooking, and the very best of North Carolina’s seasonal ingredients.

Chef Barth brings more than twenty years of fine dining experience to the kitchen, along with multiple American Culinary Federation gold medals and a longstanding connection to the Chaîne through culinary competition programs. His thoughtful, ingredient-driven approach promises a dinner that is both elegant and deeply memorable.

The evening will include:
• Eight paired courses
• Curated wine pairings
• Seasonal, technique-driven cuisine
• An intimate atmosphere celebrating fellowship and the table

On June 7, the Triangle Bailliage gathers at Vidrio for an evening shaped by fire, seasonality, and the layered influences that define Chef Barth’s cuisine. His approach, which he describes as “rustic refined,” is grounded in classical technique while remaining deeply connected to North Carolina’s farms, fisheries, and changing seasons.

With more than two decades in fine dining and culinary competition, Chef Barth brings a rare balance of technical discipline and instinctive hospitality to the table. Formally trained in culinary arts, he was introduced early to the traditions of the Chaîne des Rôtisseurs through culinary school competition programs, experiences that helped shape both his classical foundation and his respect for the craft of dining. He later trained under Certified Master Chef Daryl Shular and has earned multiple American Culinary Federation medals for his work.

For this dinner, guests will experience an eight-course menu paired thoughtfully with wines selected to complement the movement of the evening. Expect live-fire elements, layered texture and spice, and dishes that highlight the quiet beauty of local ingredients at their seasonal peak.

With more than two decades in fine dining and culinary competition, Chef Barth brings a rare balance of technical discipline and instinctive hospitality to the table. Formally trained in culinary arts, he was introduced early to the traditions of the Chaîne des Rôtisseurs through culinary school competition programs, experiences that helped shape both his classical foundation and his respect for the craft of dining. He trained under Daryl Shular, the first African American Certified Master Chef in the United States. A decorated competitor, he has earned three gold and two silver medals through American Culinary Federation competitions and competed in two Chaine des Rotisseurs Jeunes Commis Competition events. His “rustic refined” cuisine blends Mediterranean influence with North Carolina’s seasonal ingredients, highlighting local farmers and live-fire technique.

The most important and beloved figure in any Lebanese family is the grandmother — the sitti. For families such as the Hatems, who began their journey to America from small mountain villages nearly a century ago, the sitti was the heart of the home — the caretaker and teacher of their homeland’s culture, faith, and food. As you know, due to unforeseen winter weather in February, we have had to reschedule this event. While we certainly did not anticipate Mother Nature’s plans, we are hopeful that the third time will indeed be the charm! Dec. 12, 2025, Triangle – The Triangle Bailliage opened its 2025–2026 season on Sept. 19, our 38th annual opening event, with a celebration of fine food, fine wine, fellowship, and North Carolina flavor at Nanas Rockwood, the latest culinary venture from acclaimed Chef Matt Kelly. A rare Friday night event, members and guests filled the warmly lit private dining room with its blend of rustic wood and modern polish reflecting both nostalgia and innovation. The air buzzed with anticipation: a new Chaîne season, a beloved chef’s reimagining of a Durham icon, and a story about to unfold through five beautifully composed courses.
