Keep It Simple: Season generously with just coarse salt and black pepper.Ripping Hot Sear: Cook in a screaming hot cast-iron skillet or over blazing hot charcoal for 2 to 3 minutes per side.Don’t Overcook: Pull it at 145°F (medium) instead of traditional high pork temps to keep it tender and juicy.Rest and Slice: Let it rest for 5 to 10 minutes, then slice thin against the grain.
