The newest addition is Suyuri (Little Lilly): a creamy Nigori (unfiltered) sake. Smooth easy drinking profile, with floral aromas and gentle notes of white grapes and cherry blossoms. 12.5%. Best served chilled.

Yes, it finally happened! A liquor license appeared on Patcharee's kitchen doorstep - sort of (thank you Laura.)

The initial line up of beer and other libation material pictured. We'll keep an eye on what's popular- and not. Trim and expand as needed.

The first two nights sales had one winner: Beer Lao Dark. It's deliciousness cannot be described in words. Runner up: Beer Lao White.
Chang gets an honorable mention.

Did you know 20% of all beer sales are non-alcoholic? Where's the fun in that? Well, as a former publican, I have learned to never disregard even the smallest alcohol datum. So we've also got several NA choices.

We think, we hope, we wish Patcharee's liquor license will be approved soon, because we've got a plan. Everyone's got to have a plan. Right?

Patcharee's doesn't just want to sell liquor, we plan on doing something different. The potwasher has spent the last month collecting beers (and beer distribution contacts) from throughout Southeast Asia.

What is Patcharee and the potwasher's plan, you might ask? They want to focus on hard to find (and not so hard to find) Asian beers - and few South American beers. Expand the Gunnison/CB palette, so to speak.

Seems to go with the whole Thai food gig.

We'll also be selling a couple domestic brands of beer for the less adventurous, and a small selection of cocktails and wine.

After a resupply run to Denver today the potwasher cracked open a "Bia Saigon." Supposed to pair well with spicy food. The potwasher thinks it pairs well with tired of driving.

Patcharee and the potwasher's day off. Sitting at work eating (they work 7 days a week) the potwasher was complaining about several of Patcharee's kitchen appetizers. Gyoza, bao buns, and spring rolls. Made out of house and lack the authenticity that Patcharee's kitchen is known for.

Patcharee informed the potwasher, with a roll of her eyes, "you want authentic thai dumplings? You want fresh spring rolls? I know how. They are simple. But I'm not making them during the week. I cook enough." The potwasher replied, "show me." And then under his breath muttered "I'll show one of our employees."

A mixture of shrimp, crab and pork. Maybe coming soon. Depending on how quickly our Columbian employees catch on.

Patcharee and the potwasher are in the process of obtaining a liquor license for Patcharee's kitchen. A lengthy process but straight forward and somewhat simple.

The couple previously owned a bar on a beach that serve food. Never want to do that again. A selfdestructive business, to say the least.

But a restaurant that serves alcohol? That makes sense. Especially because of a massive increase in the monthly rent of their little slice of Meadows Mall.

Here's how the duties break down concerning this expansion: Patcharee plans the mixed drink strategy. After all, her palette extends beyond food and she was the mixilogist(sp) at their beachfront bar.

The potwasher determines the beer side of the business. With a focus on great Asian beers - and some not so great but needed (i.e. Singha - the beer most recognized as Thai but really sucks, in the potwasher's view.)

His list, so far:

1) Kirin and Sapporo - 2 great Japanese beers.
2) Singha and Chang from Thailand. He's trying to find Leo, the PBR of Thailand, but so far no luck.
3)Beer Lao, a top notch beer from Laos. Surprisingly smooth and tasty. Both the light and dark lager.
4) San Miguel from the Philippines. There for all the former jarheads who have witnessed the debauchery of Olongapo city when Subic Bay was still on the itinerary of big grey metal ships.
5) And of course two domestic beers, that have yet to be determined, for the less adventurous.

Ideas are accepted from anyone interested!!

For those that have not witnessed the transformation, the new Patcharee's kitchen - after a long day.

Hopefully a liquor license will appear around mid July to take advantage of the lovely bar. Serving southeast Asia beer and a few domestic fans. And, for those that were unaware, Patcharee is a talented bartender with a few cocktails up her sleeve.

For those of you still wondering about Patcharee's kitchen when the health food store closes, we're staying put. Same location. Same staff, same hours. And most importantly, same delicious food!

There will be a short one week closing for the final touches of the slow but steady renovation, 1 - 8 June.
