It’s Wellness Wednesday — and today we are talking about something small that packs a serious punch.
Microgreens are now available at Locally Rooted Market — brought to us by The Third Pasture right here in Hastings.
So what exactly are microgreens?
Microgreens are young vegetable greens harvested just after the first leaves develop — typically within 7 to 21 days after germination. They are not sprouts and they are not full grown vegetables. They sit somewhere beautifully in between.
And that in between stage is where most of the nutrition lives.
Research from the USDA and the University of Maryland has confirmed that microgreens can contain 4 to 40 times more concentrated nutrients than their fully mature counterparts — including vitamins C, E, and K, lutein, and beta carotene. The exact amount depends on the variety but the science is consistent — microgreens pack a serious nutritional punch in a very small package.
How to use them:
Sprinkle on salads for added nutrients and texture
Layer on sandwiches instead of traditional lettuce
Add to eggs, grain bowls, or avocado toast
Use as a garnish on soups
One of the simplest ways to add a meaningful nutritional boost to meals you are already making.
Grown locally and brought to our shelves fresh by The Third Pasture.
