Most fruits naturally produce a hormone called ethylene, which triggers the ripening process. This gas is like a wake-up call, signaling fruits to change color, soften, and develop their sweet, juicy flavors. In commercial agriculture, this natural process is often accelerated using a controlled application of ethylene gas, ensuring that fruits ripen evenly and quickly.
The magic happens in ripening chambers - specialized rooms where temperature, humidity, and ethylene levels are meticulously controlled. The way it works is unripe fruits are placed in these chambers, and a calculated amount of ethylene is introduced. The gas speeds up the ripening process, transforming hard, tasteless fruits into the delicious, ripe produce we love. Since fruits ripen from the inside out applying the gas helps ripen the fruit from the outside in. Think of what happens when you place a couple bananas in a paper bag.
This method is especially crucial for fruits like bananas, tomatoes, and avocados, which are often harvested while still unripe and firm. This early harvesting prevents damage during transportation. Once at their destination, these fruits are exposed to ethylene in ripening chambers, ensuring they’re perfectly ripe and ready for consumption upon reaching the shelves.
Using ethylene gas for ripening is not only efficient but also safe. Ethylene is a natural plant hormone, and its use in controlled environments doesn’t alter the nutritional value or safety of the fruit. It simply accelerates the natural process that the fruit would undergo anyway.

Navels Oranges are in season from November-June. (Winter/Spring)
Navels get their name because they have a small, belly button like formation on one end of the fruit, while other oranges do not.
They are also known for being seedless, sweet, packed with juice, and less biter than other variety’s.
You probably didn’t know:

• The name of the fruit predates the color “orange” by almost 200 years.
