From slinging food on the bustling streets of Tijuana as a kid to running the show right here on Seward Street in Juneau, what a ride it’s been.

Gonzalo’s culinary journey has seen plenty of kitchen heat over the years—from putting in work at spots like The YardHouse, The Lazy Dog, and Mimi's Cafe, all the way up to slinging legendary tacos out of a humble street cart after making the big move to Alaska.

Today, we are celebrating not just another year around the sun, but the sheer grit, hustle, and heart it took to build this kitchen. We couldn't be prouder to watch him bring the true, ancestral flavors of his roots in Puebla and Tijuana straight to your plate.
