What an INCREDIBLE Rooftop Ransom fundraiser — we are beyond excited to share that together we raised $10,074 🙌💸

Your homemade bread isn’t going to taste like store-bought bread.
And that’s the point.

Store-bought bread is engineered to be ultra soft, ultra light, and “fresh” for way longer than bread naturally stays fresh. Homemade bread is real food. It has a shorter shelf life, it stales faster, and it tastes like… actual bread.

Here’s the kind of stuff commercial bakeries often use to keep bread pillowy and slow down staling:
• Enriched flour (bleached)
• High fructose corn syrup or corn syrup solids
• Added “vital wheat gluten” to change texture
• Soy flour
• Vegetable oils (soybean/canola)
• Mono- and diglycerides
• DATEM (dough conditioner/emulsifier)
• Calcium propionate (mold inhibitor/preservative)
• Sodium stearoyl lactylate (emulsifier)
• Polysorbate 60/80 (emulsifier)
• Azodicarbonamide (flour treatment agent)
• Potassium bromate (dough strengthener)
• Ammonium sulfate (dough conditioner)
• Calcium sulfate (dough conditioner)
• Enzymes (amylase, fungal enzymes, etc.)
• “Natural flavors” (a mystery category all its own)
• Added gums (guar gum, xanthan gum)
• Soy lecithin
• Added conditioners and “improvers”

So if you bake a loaf at home with flour, water, salt, yeast (or sourdough starter), maybe a little honey or butter… it’s going to be different. It might be a little denser. It might have a real crust. It might not stay squishy for 10 days.

And honestly? That’s the re-learning.

Sometimes baking at home means we have to retrain our taste buds to remember what real food tastes like when it hasn’t been optimized for shipping, shelf life, and “perfect texture.”

Homemade bread isn’t meant to live on your counter for two weeks.
It’s meant to feed your people today.
