Creamy Chicken Tortellini Alfredo
Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
20 oz refrigerated cheese tortellini
2 tbsp olive oil
2 tbsp unsalted butter
4 garlic cloves, minced
1½ cups heavy cream
1 cup freshly grated Parmesan cheese
½ cup shredded mozzarella cheese
1 tsp Italian seasoning
1 tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
Salt and black pepper, to taste
½ cup reserved pasta water
2 tbsp chopped fresh parsley
Extra Parmesan cheese, for serving
Instructions:
Season the chicken pieces with garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden brown and cooked through. Transfer to a plate.
Cook the tortellini according to the package directions until tender. Reserve ½ cup of pasta water, then drain.
Reduce the skillet heat to medium and melt the butter. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Cook for 2–3 minutes.
Stir in the Parmesan and mozzarella until melted and the sauce becomes smooth and creamy. Season with salt and black pepper.
Add the cooked tortellini and chicken to the skillet and gently toss until everything is coated in the Alfredo sauce.
Add a splash of reserved pasta water if needed to create a silky, creamy consistency.
Garnish with fresh parsley and extra Parmesan cheese.
Serve immediately while hot and creamy.
