✨ Ashley B’s Opening Week Update ✨

I wanted to share a quick update for our first week at Ashley B’s!

Our official opening week will begin Tuesday, June 23, pending final health department inspection approval.

We will be open Tuesday–Friday for opening week, with pre-order carryout only.

If you do not hear back from me immediately, please don’t worry. I will confirm your order as soon as I can. I truly appreciate everyone’s patience as I get everything up and running.

⏰ Pickup Times:
Lunch pickup: 11:00 AM – 1:30 PM
Dinner pickup: 5:00 PM – 7:30 PM

🥤 Bottled water and a variety of soft drinks will be available for $1.50 each.

✨Tuesday

Lunch — Classic Club on Croissant — $15
A large buttery croissant layered with turkey, ham, bacon, lettuce, tomato, cheese, and mayo. Served with pasta salad and a pickle spear.

Dinner — Ritz Cracker Chicken Plate — $17
Tender chicken breast topped with a buttery Ritz cracker topping and baked until golden. Served with mashed potatoes, green beans, and butter muffins.

✨Wednesday

Lunch — Grilled Chicken Salad — $15
A fresh garden salad topped with grilled chicken breast, shredded cheese, boiled egg, bacon, tomatoes, cucumbers, red onion, and croutons. Served with a homemade yeast roll and your choice of homemade ranch or homemade vinaigrette.

Dinner — Pork Roast Plate — $18
Slow-cooked pork roast served with green beans, corn casserole, fried apples, and a homemade yeast roll.

✨Thursday

Lunch — Hot Chicken Bacon Club Plate — $15
Shredded chicken breast mixed with mayo, Dijon, garlic, Swiss cheese, and bacon, baked inside flaky crescent dough and sliced into a generous portion. Served with green beans.

Dinner — Meatloaf Plate — $17
Homemade meatloaf served with mashed potatoes, green beans, and cornbread.

✨Friday

Lunch — Trio Salad Plate — $15
A scoop of homemade chicken salad, tuna salad, and pimento cheese served with pasta salad, crackers, and a pickle spear.

Dinner — Bourbon Glazed Chicken Thigh Plate — $18
Tender chicken thighs baked in a sweet and savory bourbon glaze. Served with a baked sweet potato with butter and a sugary cinnamon topping, broccoli casserole, and butter muffins.

Desserts Available All Week

Chessman Banana Pudding — $4
A rich, creamy banana pudding made with cream cheese, sweetened condensed milk, vanilla pudding, real whipped cream, bananas, and two layers of Chessman cookies.

White Chocolate Lasagna — $4
A cool, creamy layered dessert with a sweet crust, cream cheese layer, white chocolate pudding, and whipped topping.

Chess Bars — $3
A generous-sized homemade chess bar.

We stopped by Rhetts Country Market this afternoon to drop off some cases of our sausage, and I just couldn’t leave without one of these gorgeous bouquets from Jarhead Homestead. I’m a sucker for native flower arrangements!

Jarhead Homestead is a local homestead run by two Marine Corps veterans who grow flowers, raise food, and share their homesteading journey with our community.

One of my favorite things about working with local businesses is getting to support other hardworking folks doing the same. If you’re stopping by Rhetts to enjoy some of our Gibson Farm & Ranch sausage for breakfast, be sure to check out the beautiful bouquets from Jarhead Homestead while you’re there. Everybody loves the pictures of pigs rooting through fresh pasture. Everybody loves seeing the finished product on the table and hearing how much better pasture-raised pork tastes than anything from the grocery store.

But what we don’t talk about very often is the part in the middle.

The part where you spend months caring for an animal every single day. The early mornings, the late nights, the fence repairs, the feed runs, the constant checking to make sure everyone is healthy, comfortable, and safe. The part where you know from the beginning what their purpose is, but you still care deeply about them anyway.

Sending animals to processing never becomes something we celebrate. It weighs on us more than most people probably realize. Because before they were pork chops, sausage, or bacon, they were animals that depended on us.

But that’s also why we believe so strongly in raising food this way. We can’t change the fact that animals become food, but we can make sure they have a life worth living first. Good pasture. Fresh air. Room to be pigs. Respect every step of the way.

And when the time comes, we remind ourselves that these animals are going on to do exactly what they were raised to do: nourish families.

It’s not always the easiest part of farming, but it’s one of the most important.

Pasture Moving Day. It’s not the most glamorous part of what we do.

Today meant pulling hundreds of feet of electric wire, gathering posts, hauling supplies, and rebuilding an entire paddock by hand for every single group of pigs we have. It’s hot, it’s time-consuming, and by the end of the day we’re usually covered in dirt and wondering why we didn’t choose an easier hobby.

But this work matters.

Instead of keeping our pigs in the same area all season, we regularly move them onto fresh pasture. The pigs get new grass, fresh forage, new areas to explore, and cleaner ground. Just as importantly, the land gets a chance to rest and recover before animals return.

This is one small example of regenerative farming—a way of raising livestock that focuses on improving the health of the soil, supporting healthy animals, and working with nature rather than against it.

Every pasture move helps distribute nutrients, reduce overgrazing, encourage plant growth, and build healthier ground for future generations.

It’s definitely more work than simply opening a gate and leaving animals in one pasture all year. But we believe the extra effort is worth it—for our pigs, for our land, and ultimately for the food we raise for your family.

We find it amazing what Cliff and farms like his are doing. Our little farm does not provide breeding stock, but we are SO thankful for the local and regional farms that do. Animal husbandry and raising livestock is a foundational pillar of the agricultural industry. THIS is American agriculture. 🇺🇸

Yesterday’s Memorial Day table was filled with food raised right here at Gibson Farm & Ranch — from breakfast bacon and eggs to pork chops on the grill — our pork has truly become part of our everyday life.
