Giving all respect and paying homage to the ancient maestros of Norcia, Umbria—the highly skilled, almost mythic traveling band of butchers and salumieri known simply as the Norcini.

They journeyed throughout Italy, most notably to Rome, stopping along the way to serve families and villages. With practiced, surgical like hands, they transformed prized family hogs into humble yet world-class salumi—creations that still inspire what we make today.

Heritage isn’t something we reference for buzz wording or trend. It’s something we’ve practiced since day one and always will.

Elevate any dish where you would normally use butter. This may not be known or by far, not common in American home kitchens, but once you understand it, there’s no turning back.

This is salt cured, herb rubbed/packed and slowly aged slab of silky light back fat. It has a better ratio of unsaturated fat to saturated fat than a slab of butter, of equal mass. (No other breed compares) Scientifically analyzed and proven. And damn tasty!! I’ve been trying to tell or show all of you these qualities and characteristics for over a decade, regarding this special breed. Please believe it. Research it and join us! Healthy animal fats are already back and are now way “on trend” but, we’ve been well ahead of that curve and have perfected our style of Cured Mangalitsa Lardo!
Add it to your favorite pasta dishes, risotto, low and slow braises, or even wrap it around your favorite grissini for salumi platter. Trust me.

It’s quite a great feeling and accomplishment when you crack into any salumi or charcuterie product, in which it came from an animal you raised, fed and farmed on your family farm. This is a category within this ancient craft, that has sadly and nearly disappeared, due to the industrial garbage that has taken over- but we absolutely love it, have a passion for it and will carry on with it for as long as we can possibly do so.
