Gochujang jjigae

My Mom’s Gochujang Jjigae (Korean Spam Spicy Stew) 🌶️
This is one of the dishes my mom used to make for me when I was growing up in Korea. Simple, comforting, and so good with a bowl of rice!
Ingredients:
- 1 can Spam
- 2 potatoes
- 1/2 onion
- 500 ml water
- 1 tbsp minced garlic
- 1 tbsp sugar
- 1 tbsp Yondu .us
- 1 tbsp soy sauce
- 2 tbsp tuna extract
- 2 tbsp Korean chili flakes (gochugaru)
- 2 tbsp gochujang
No Yondu? Just add 1 extra tbsp of soy sauce instead.
Instructions:
1. Cut the Spam, potatoes, and onion into bite-sized pieces.
2. Heat a little oil in a pot and sauté the Spam, potatoes, and onion until lightly browned.
3. Pour in 500 ml of water.
4. Add the garlic, sugar, Yondu, soy sauce, tuna extract, gochugaru, and gochujang. Stir well.
5. Once it starts boiling, let it simmer for about 15 minutes.
6. When the potatoes are fully cooked and the broth has thickened slightly, it's ready!
The broth should be a little rich and thick, not too watery.
Serve with a bowl of hot rice!

Sometimes people discourage you in ways that almost sound like they’re trying to help.
“You won’t make this much anywhere else.”
“That’s too risky.”
“You should just stay where you are.”
I believed things like that when I was younger, and because of it, I stayed in situations I didn’t even want for way too long.
Of course, other people’s opinions can be helpful. Sometimes they can see things you can’t.
But don’t forget that there are also things about yourself that only you truly know.
Listen to advice.
Just don’t let someone else’s fear become your limit.
