Beef ribs came off the smoker this morning.

Bone-in, seasoned with our own blend, smoked low and pulled when the meat drew back from the bone.

The blend goes on the shelf later next month. Until then, it's on the ribs.

Mr. Foxworth recalls....

There was a time - and I remember it - when a household did not buy oil by the gallon. Good oil came in a small bottle. It sat near the stove and it was used with intention, because whoever paid for it had no intention of pouring it out carelessly. It was savored.

Arbequina extra virgin olive oil and reserve balsamic vinegar, two ounces apiece, now on the shelf. The oil is soft and green and almost sweet. The balsamic is aged thick enough to cling to a spoon.

Small bottles were never about thrift. They were about knowing exactly how much of a fine thing a person actually needs.

Sample Monday, August 24.

House-made smoked queso and chips at the counter, free to taste, and I intend to stand near it.

Molten, smooth enough to pour, hickory worked all the way through rather than sitting politely on top.

Somebody at that tailgate is going to show up holding a bowl they're visibly proud of. Make it you.

Order the chips and queso, take it to the game or take it home, and set it down like it cost you an afternoon.

Yesterday, the board. Today, what goes on it is more than meat and cheese.

Tapenades from France, in small jars.
Green olive and almond, dried tomato and basil, an eggplant and red pepper bruschetta.
Roasted pistachios.

The counter will tell you which one belongs next to which sausage.

That is the sort of question we like.
