Yum! This felt like something I would order in a restaurant, but was easy to make at home.
I made just a couple changes:
1. Cooked the farro in chicken broth
2. Instead of adding the kale to the pot with the farro, I put it in a large bowl and massaged it with just a little olive oil and salt
3. Let the farro and sweet potatoes cool to about room temperature before combining with other ingredients
4. Added a little bit of sliced flank steak that we had leftover from last night--it added protein but was certainly not necessary and I don't plan to do it in the future.
5. Left out the mint because I didn't think it would go well with the steak.
6. And I had pickled onion in the fridge and just completely forgot to add it... If you've eaten at my house you know that someone is always in charge of making sure I double check all the garnishesđŸ˜†
