Yum! This felt like something I would order in a restaurant, but was easy to make at home.

I made just a couple changes:
1. Cooked the farro in chicken broth
2. Instead of adding the kale to the pot with the farro, I put it in a large bowl and massaged it with just a little olive oil and salt
3. Let the farro and sweet potatoes cool to about room temperature before combining with other ingredients
4. Added a little bit of sliced flank steak that we had leftover from last night--it added protein but was certainly not necessary and I don't plan to do it in the future.
5. Left out the mint because I didn't think it would go well with the steak.
6. And I had pickled onion in the fridge and just completely forgot to add it... If you've eaten at my house you know that someone is always in charge of making sure I double check all the garnishesđŸ˜†

I'm pretty good at eating vegetables at dinner but struggle with incorporating them into other meals. I've always liked sprouts and consistently add them to sandwiches and salads when dining out, but found them expensive to purchase for home use. So I decided to purchase a sprout growing kit. It's super easy and SO much cheaper!

Today's lunch, English muffin with egg salad, sprouts and pickled red onion and a nectarine. Nothing fancy, just real whole ingredients.

My goal is to make at least one vegetarian meal per week. We love leftovers so generally I make enough to cover at least 2 nights of dinner and some lunches for work if I'm lucky.

I'd like to add to my vegetarian repertoire. Please share your favorite recipes.

Last night I had the privilege of hosting my ladies Bible study group for a summer dinner. This group of women welcomed me as one of them so completely that I have a hard time believing we've been together less than a year. While I completely forgot to take pictures of all the food, I was reminded of the magic of joining around a table.

We're taking advantage of Cooper being gone at camp to do a date night at home on our patio. We have an outdoor cooler to make it bearable on 90 degree days.

Snake River wagyu grilling steak from Porterhouse in Eagle, a bottle of wine from Napa Valley that we've been "aging" in our newly designed wine racks (created and installed by Josh and his dad), grilled veggies and honey and harissa farro salad.

I'm hoping that the next few months will bring a lot more cooking. Tonight I looked up the recipe for tahini sauce, but just cooked everything else by intuition and feel.

We had grain bowls (farro) with roasted sweet potatoes, red onion, chicken apple sausages and kale, all seasoned with salt, pepper, garlic and smoked paprika topped with the tahini sauce.
