Fried Sliced Mushrooms with Ranch Dip

**Ingredients:
*For the Fried Mushrooms:
* 1 lb button or cremini mushrooms, cleaned and sliced
* 1 cup all-purpose flour
* 1/2 cup cornmeal
* 2 large eggs
* 5/16 cup milk (or \~5 tbsp)
* 3/4 tsp salt
* 3/4 tsp black pepper
* 1 tsp paprika
* Vegetable oil, for frying

*For the Ranch Dip:
* 1/2 cup mayonnaise
* 1/2 cup sour cream
* 1 tsp dried dill
* 1 tsp parsley
* 1 tsp onion powder
* 2 tsp powdered garlic

**Directions:
1. Prep the Mushrooms: Slice mushrooms and pat them dry.
2. Make the Breading: In a bowl, mix flour, cornmeal, salt, pepper, and paprika.
3. Wet Mix: In another bowl, whisk eggs with milk.
4. Dip & Coat: Dip each mushroom slice in the egg mixture, then coat in the flour mixture.
5. Fry: Heat vegetable oil in a pan over medium-high heat. Fry mushrooms in batches until golden brown and crisp. Drain on paper towels.
6. Make Ranch Dip: Combine mayo, sour cream, dill, parsley, onion powder, and garlic powder. Mix until smooth.
7. Serve: Serve mushrooms hot with ranch dip on the side.

6. Once baked, cut into squares or slices and serve warm.

- 3 tbsp goat cheese (crumbled)

**Directions:
1. Prepare the Ingredients: Peel and slice the kiwis, chop the pecans, and crumble the goat cheese.
2. Assemble the Salad: In a large bowl, combine spinach, blackberries, sliced kiwis, and chopped pecans.
3. Dress the Salad: Drizzle poppyseed dressing over the salad and toss gently to coat.
4. Top & Serve: Sprinkle crumbled goat cheese on top and enjoy!

1. In a large bowl, combine broccoli florets, crumbled bacon, cranberries, and red onion.

**Directions:
1. Preheat oven to 375°F (190°C).
2. Place pear halves on a baking sheet, cut side up.
3. Fill the center of each pear with crumbled blue cheese and chopped walnuts.
4. Drizzle honey over the pears.
5. Bake for 10-15 minutes, until pears are tender and cheese is slightly melted.
6. Garnish with fresh thyme and serve warm. Enjoy!

- *Optional: Chopped celery and/or red onion

**Directions:
1. In a large bowl, combine shrimp and sliced cucumbers.
2. In a separate bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, dill (or chives), salt, and pepper.
3. Pour dressing over the shrimp and cucumber mixture and toss gently to coat.
4. Add optional celery or red onion for extra crunch.
