You may have noticed a new addition to the farmstand this year…Collards!
Farmer Rachel has a love of collards and was excited to grow these gorgeous greens this season. What’s extra special about our collards, is that they’re grown from an ultracross seed mix. That means the seeds and plants contain genetic material from 21 different heirloom varieties of collards. That’s a whole lot of genetic diversity! For this reason each plant, and therefore each leaf in your bunch, looks a little different.
As farmers, this makes our production more resilient. As consumers, this makes your food more delicious, diverse, and exciting. Our food system encourages farmers to reduce diversity, making our food more uniform and more bland. Booo!
Growing crops like the Ultracross Collard Green is just one way we are trying to bring variety back into what we eat.
