Just in case you needed one more reason to join us for our Open Fire Dinner this coming Friday… meet four of the newest additions to Parmele Ranch. 🤎

These little Highland babies have all made their debut recently, and they’re just a few of the faces you may get to see during our ranch tours before dinner.

Guests will have the chance to explore the ranch and see our bison, Highlands, Shorthorns, chickens, ducks, peacocks and more before we settle in for happy hour and an open-fire, farm-to-table meal with Wild Foods by Dyllan. 🔥

We’re just days away, and we’re so excited to welcome everyone out to the ranch for an evening with our community.

Every Saturday morning, you can find me at the Farmers Market of the Ozarks! 🌱

Why? Because when I say my food is 100% locally sourced, I mean it.

From fresh produce and pasture-raised meats to dairy, herbs, and everything in between, I believe in knowing exactly where my ingredients come from.

If I’m not sourcing something directly from our local farmers at the market, I’m purchasing it from a locally owned store.

Every dollar I spend on ingredients stays within our local economy, supporting the farmers, growers, producers, and small businesses that make the Ozarks such an incredible place to cook.

For me, being a chef isn’t just about what ends up on the plate. It’s about the people who grow it, the land it comes from, and the community we support along the way.

100% local. 100% from scratch. Always intentional.

ONE WEEK AWAY. 🔥🍂

Next Friday, we’ll be gathering at Parmele Ranch for our Open Fire Farm to Table Dinner with Wild Foods by Dyllan - and we can finally share what’s on the menu.

From bison brisket and ribeye to Highland oxtail, Ozarks sorghum molasses cornbread and smoked skillet apple pie, this meal is all about good food cooked over fire and enjoyed right here on the ranch.

OPEN FIRE MEAL AT PARMELE RANCH 🦬🔥

October 23rd, join me at Parmele Ranch for an evening celebrating locally raised meats, open-fire cooking, and the incredible agricultural heritage of the Ozarks.

Few things connect us to our food quite like enjoying a meal on the very ranch where it was raised.

We’ll be cooking over live fire, using traditional techniques, quality ingredients, and a whole lot of intention.

We’re getting closer! 🔥🍂

Here’s a look at what you can expect when you join us at the ranch for our Open Fire Farm to Table Dinner with Wild Foods by Dyllan.

Come early, explore the ranch, meet some of the animals and settle in for happy hour before we gather around the table for a family-style dinner cooked over the open fire.

And make sure you stick around for sunset. Golden hour at the ranch is one of our favorite parts of the day. 🤎

It won’t be long before these hills start trading their summer greens for fall color. 🍂

We always look forward to autumn at the ranch… the cooler days, changing leaves and a much needed break from the summer heat.

But for now, we’re soaking up the last of the green pastures, long days, and views like this one.

Not every Highland looks exactly like the ones you see in the show ring…

Meet Mabel. 🐮

You might notice her horns don’t have the same symmetry you typically see in a Highland. She may never be the picture-perfect example of breed standards - but around here, that doesn’t make her any less deserving of a good life.

She gets the same pastures and the same attention as the rest of our herd.

Part of raising animals is appreciating them for what they are - not just how closely they fit a standard. And we think she looks pretty beautiful right where she is.🤎

A bison’s tail can give you a little clue about its mood. When they’re calm, it typically hangs naturally. But when that tail goes straight up, it can be a sign they’re agitated or on alert… and a good reminder to give them plenty of space.
