There’s something special about spring on the ranch. The past few weeks have brought so much new life to the property - from several new bison and Highland calves out in the pasture, to two new litters of puppies keeping us busy, and even a surprise baby deer spotted around the ranch.

It’s one of our favorite times of year here at Parmele Ranch Co. Watching the ranch wake back up after winter and seeing all these new little lives thriving out in the Ozarks never gets old.

The calves are growing fast, the puppies are full of personality already, and the baby deer has definitely stolen a few hearts around here.

We’re feeling very thankful for this season and all the life it brings. 🌾

Meet the Highland Herd 🐂

So, every week, we’ll be spotlighting a different Highland and giving you a little glimpse into ranch life here in the Ozarks.

This week’s spotlight is Nala of Crocus Hill 🤎

Nala is an AHCA registered Highland known for her beautiful coat, gentle personality, and striking presence out in the pasture. She’s one of those cows that always catches your eye.

We’re excited to keep introducing the herd one by one — and share more of the personalities, pedigrees, and stories behind them along the way.

We’ve officially expanded into Shorthorn cattle this year.

We’ve started building a small herd here in the Ozarks, and we’re excited about what these cattle bring to the ranch with their strong maternal traits, calm dispositions, beautiful coloring, and quality genetics. They’ve already been a fun addition to watch out in the pastures alongside our Highlands, Angus, and bison.

We’re still growing and learning with this breed, but we’re excited for what’s ahead and proud to continue diversifying the ranch one step at a time.

Meet Laydon
T-Ross Summit Ranch Laydon (ET, PV, D) #64,370

We’re kicking off our weekly Highland spotlight with one of our standout bulls - Laydon. This AHCA registered red bull was born in March 2022 and has been a great representation of the breed with his strong build and classic Highland look.

With his rich red coat, long horns, and strong genetics, Laydon has been a solid part of the herd - and now he’s ready for his next chapter. He’s currently looking for a new pasture 🌾

Whether you’re looking to expand your herd or add quality Highland genetics to your program, Laydon is one to consider.

What a special night out on the ranch. 🤍

Friday’s Farm to Table Dinner with Wild Foods by Dyllan was everything we hoped it would be - incredible food, wonderful people, beautiful weather, and a reminder of why we love sharing this place with others.

Guests enjoyed an intimate evening surrounded by the Ozark hills, with courses featuring our ranch-raised Highland beef and bison, including Highland Short Rib and Bison Filet/Ribeye. Every dish was thoughtful, flavorful, and perfectly prepared.

One of our favorite moments of the night was watching the bison and Highland cattle wander right up near the dinner space as everyone ate and visited together. It felt like the ranch itself joined us for the evening.

And to top it all off, we ended the night with one of the prettiest sunsets we’ve seen in a long time.

Huge thank you to everyone who came out, to Dyllan for creating such an amazing dining experience, and to all who helped make the night so memorable. We’re already looking forward to the next one. 🌅🥩🐂
