Crispy Farmhouse Fried Chicken🍗🐔
Crispy, golden, and seasoned just right!

Ingredients

For the chicken:
3 lbs chicken pieces — thighs, drumsticks, wings, or breasts
2 cups buttermilk
1 tablespoon hot sauce, optional
1 teaspoon salt
½ teaspoon black pepper

For the coating:
3 cups Hard White Wheat Flour
2 teaspoons salt
1½ teaspoons paprika
1½ teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon cayenne pepper, optional
½ teaspoon baking powder

For frying:
Vegetable or peanut oil, as needed

Directions:
1. Marinate the chicken. Place chicken pieces in a large bowl or resealable bag. Add buttermilk, hot sauce, salt, and pepper. Mix until the chicken is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.
2. Prepare the coating. In a large bowl, whisk together Hard White Wheat Flour, salt, paprika, garlic powder, onion powder, black pepper, smoked paprika, thyme, cayenne, and baking powder.
3. Coat the chicken. Remove each piece from the buttermilk, letting the excess drip off. Dredge thoroughly in the seasoned flour, pressing the flour onto the chicken to create a textured coating.
4. For extra crunch: Dip the floured chicken back into the buttermilk and then into the flour mixture a second time.
5. Heat the oil. Heat about 1½–2 inches of oil in a heavy-bottomed skillet or Dutch oven to 350°F. Work carefully around the hot oil.
6. Fry the chicken. Carefully place the chicken into the oil without overcrowding the pan. Fry in batches, turning occasionally, until the coating is deep golden and the chicken reaches 165°F internally. Cooking time will vary depending on the size and cut of the chicken.
7. Drain. Transfer the cooked chicken to a wire rack set over a baking sheet. Allow excess oil to drip off before serving.

Pair your crispy chicken with mashed potatoes, homemade gravy, coleslaw, or sweet corn for a true farm-table meal.

Serves: 4–6
Prep Time: 20 minutes + marinating
Cook Time: About 25–35 minutes

Unfortunately the farm schedule doesn't always break when family comes in... Sometimes you adapt and take your niece and nephew to work on the farm! I think Emmet and Ellie enjoyed their time with Uncle Derek engaging the auto steer and taste testing the field corn! No other way to top off the night than ice cream and sorbet at Catalpa's!
