At the foot of a glacial Alp, deep inside the mountain, a former Swiss military bunker houses thousands of wheels of raw milk cheese aging peacefully ๐Ÿ”๏ธ ๐Ÿง€๐Ÿ‡จ๐Ÿ‡ญ

Gourmino purchased the defunct military galleries in 2015 with the vision of transforming them into caves to age its cheeses, since the high humidity and low, constant temperatures inside the mountain provide the perfect natural climate for cheese affinage ๐Ÿ’ฆ ๐Ÿชจ๐Ÿง€

After 2 years of planning, construction began and a tunnel was drilled out of the rock to connect the 4 separate chambers. It took about 12 months to harvest and cut the spruce boards from the nearby Kander Valley to support cheeses as large as the 200 lb Emmentaler AOP wheels ๐Ÿชต๐Ÿ’ช
