Ingredients:
2 cups of wild rice
4 cups of vegetable broth
1 medium onion, finely chopped
2 cloves of garlic, minced
1 cup of mushrooms, sliced
1 red bell pepper, diced
1 cup of spinach, chopped
1 teaspoon of dried thyme
Salt and pepper to taste
2 tablespoons of olive oil
1/4 cup of grated Parmesan cheese (optional)
Directions:
1. First things first, let’s get that wild rice cooking! Rinse it under cold water, then toss it into a pot with 4 cups of vegetable broth. Bring it to a boil, then reduce the heat to a simmer. Cover it and let it cook for about 40-45 minutes, or until it’s tender and fluffy.
2. While the rice is happily simmering away, grab a large skillet and heat up the olive oil over medium heat. Once it's warm and inviting, add in your chopped onion. Sauté it for about 3-4 minutes until it turns translucent and fragrant.
3. Next, let’s add in the minced garlic and cook it for about a minute. Oh, the smell will be divine!
4. It’s time to introduce the mushrooms and red bell pepper to the skillet. Stir everything together and let it sauté for another 5-7 minutes, or until the veggies are tender.
5. After your rice has reached perfection, fluff it up with a fork and stir it into the skillet with the sautéed veggies. Add in the fresh spinach, dried thyme, and season everything with salt and pepper to taste. Toss it all together until the spinach wilts beautifully.
6. If you’re feeling a bit fancy, sprinkle the grated Parmesan cheese over the top and give it a gentle stir. It adds a lovely creaminess that’s hard to resist!
7. Serve up this delightful dish warm and enjoy the comforting flavors that dance on your palate.
