Summer Minestrone made the Brodo way ☀️
Ingredients:
1/2 cup summer vegetables, chopped however you like
carrots
celery
onions
white cabbage
Tuscan kale
3 tbsp olive oil
1 tbsp thinly sliced garlic
1 tbsp dried oregano
fresh basil
2 tbsp tomato paste
6 cups Brodo Organic Chicken Broth
salt
extra virgin olive oil
parmesan
Heat olive oil in a heavy bottom pot until the first wisp of smoke. Add garlic, onion, carrots, celery, white cabbage, and Tuscan kale. Sprinkle with salt and sauté for 3 minutes. Add the remaining vegetables and sauté for 5 more minutes. Stir in tomato paste, basil, and oregano until all vegetables are coated. Cover and cook on low for 10 minutes. Add Brodo Organic Chicken Broth, bring to a boil, then simmer uncovered for 5 minutes. Finish with extra virgin olive oil and plenty of parmesan.
