The Pendleton Round-Up has 110 years of history in Western culture and tradition. It is one of the most recognized rodeos and western events in the world due to its deep roots in cowboy and Native American

history. The famous Pendleton Bucking Horse logo and “Let’ er Buck” slogan are iconic trademarks of the Pendleton Round-Up Association. And now, that brand that has propelled the likes of Pendleton Whiskey is going on beef. Pendleton Beef, in conjunction with the Pendleton Round-Up Association, is ready to promote the cattle industry, Western culture, and communities connecting customers with a story as old and authentic as the West.

At Spork in Bend, the Pendleton Beef® and broccoli brings bold flavor to a classic favorite. Tender steak stir fried with broccoli, g*i lan, onions, peppers, and ginger in a rich, savory sauce, finished with green onions, fried garlic, and sesame seeds.

Their Thai Steak Salad brings a completely different direction with grilled bavette steak, greens, cabbage, bean sprouts, herbs, fried shallot, toasted coconut, and a sweet-spicy tamarind dressing that ties it all together.

Two dishes, two completely different flavor profiles, both done exceptionally well.

At Zydeco Kitchen & Cocktails, the Pendleton Beef® Teres Major is done right. A 10 oz steak served with roasted yams, broccolini, and Kale Raab, finished with foie gras butter that brings everything together. Paired with their beet salad with citrus marinade, chevre, pistachio, and spring lettuces, it rounds out the table in the best way.
